How To make Pork Chop Rhubarb Casserole
4 pork chops
3 C. rhubarb -- cut up
1 Tbsp. cooking oil
1/2 C. brown sugar
1 Tsp. cinnamon
2 1/2 to 3 c. bread crumbs
1/4 C. flour
Salt and pepper to taste
In skillet, brown pork chops in oil; add salt and pepper. Remove to platter. Mix 1/4 cup pan drippings with bread crumbs. Reserve 1/2 cup. Sprinkle remaining crumbs into 9x13 inch baking dish. Combine rhubarb, sugar, flour and cinnamon. Spoon half over the bread crumbs. Arrange pork chops on top. Spoon remaining rhubarb mixture over chops. Cover with foil and bake at 350 degrees for 45 minutes. Remove foil, sprinkle remaining crumbs. Bake 15 minutes longer.

How to Make Breaded Pork Chops
Kick your pork chop game up a notch tonight and bread them! Buy thinner chops or medallions. Dredge in flour, dip in egg wash, coat in crumbs, repeat. Be as simple or adventurous with your crumb coating as you'd like. Saute for 2-3 minutes per side in a skillet until golden brown. Rest 3 minutes, garnish and savor!

DELICIOUS RECIPES THAT USE RHUBARB | Welcome to my Country Kitchen
There's so many unique ways to use up your rhubarb stores in the freezer before another year of rhubarb is ready to harvest.
Ball Canning Books
Rhubarb Juice (there are many options)
Fill Steamer Juicer with chopped rhubarb. Juice according to your steamer's directions. Sweeten as desired or use in Rhubarb Jelly and Cran-rhubarb Mules.
Rhubarb Jelly
3.5 cups pure rhubarb juice
4 cups white sugar
1 box Sure-jel
Mix all ingredients. Bring to a boil stirring constantly. Continue stirring for 1-2 minutes. Pour into clean jelly jars. Seal and water bath can for 10 minutes.
Cran-rhubarb Mule
Muddle 2 T. rhubarb juice, 1 sugar cube and lime wedge (or a splash of lime juice) in traditional copper mug. Add 1-2 shots (ounces) cranberry vodka such as @DeepEddy. Fill cup with ice cubes or crushed ice and top with Ginger beer. Stir and serve. The cups keep the drink cold for a very long time.
Streusel Rhubarb Bread pg. 40 in ACL cookbook
1 12 cups brown sugar
12 c. oil
1 egg
1 c. buttermilk or 2 Tbsp. lemon juice then filled with milk to 1 cup
1 tsp. vanilla
2 12 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 12 c. chopped rhubarb
12 c. chopped walnuts
Mix first 5 ingredients well. Then add in dry ingredients until just mixed. Gently fold in rhubarb and nuts. Bake in greased loaf pans at 350 degrees for 35-60 minutes depending on the size pan. Sprinkle with cinnamon sugar before baking. I like making mini loaves and freezing them to give away.
Rhubarb Custard Dairy Bar
1 c. butter
2 c. flour
4 Tbsp. sugar
Fork together to make large crumbs. Press firmly into 9x13 pan. Bake at 350 degrees for 10 minutes.
3 eggs
1 14 c. sugar
3-4 Tbsp. flour
14 tsp. salt
1 c. heavy cream or 2% milk
6 c. diced rhubarb
Mix all ingredients well and pour over hot crust. Bake at 350 degrees for 50 minutes or until custard is well set. Allow to cool completely.
4 oz. gream cheese
14 c. sugar
12 tsp. vanilla
8 oz. whipped topping (Cool Whip)
Cream together first 3 ingredients and then fold in Cool Whip. Spread over cooled rhubarb custard. Chill and serve. This is a family favorite and always turns out so, so good.
