3 types of fermentation: This form of preservation has been around 1000's of years.
1: Lactic Acid: This happens when naturally occurring yeastband bacteria convert sugars into lactic acid. Typically used for vegetables.
2. Ethyl Alcohol: Most of this is done with beers, wine hard ciders, and alcoholic beverages.
3. Acetic Acid: This occurs when starch from grains and sugars from fruit. This is the one we are doing for this.
Rhubarb vinegar:
2 cups chopped
2 cups white vinegar
Add ingredients to pan boil for 2 to 3 minutes.
Pour all ingredients into a canning jar. Cover with a paper towel secure with a rubberband, or use a fermenting lid.
Place in a cool, and dark place for about 7 days
Cut a piece of cheese cloth or tea towel and line colander and drain contents into colander.
Storn in clean, sterilize glass jar store in cool dark place for 6 months.
This can be used for salad dressing, dipping french fries or basting chicken or fish.
Rhubarb Vinaigrette: makes 3/4 cup
Ingredients:
1 cup fresh rhubarb
3 tablespoons rhubarb vinegar or you can substitute white, apple cider, champagn white wine or white balsamic vinegar
2 tablespoons orange juic
2 tablespoons honey
1 tablespoon dijon mustard I used stone ground
1 tablespoon grated onion
1 teaspoon grated garlic
salt and pepper to taste
1/4 cup olive oil just use a mild oil
Instructions:
1. If you don't have rhubarb vinegar, cook down fresh rhubarb with a little bit of water and the orange juice until very soft. about 10 minutes. Than proceed with recipe substituting with another vinegar.
2. Add vinegar, honey, orange juice, onion, garlic, and salt and pepper into food processor.
3. Process until smooth.
4. Stream in oil in a thin stream, with food processor still running, until dressing is frothy.
5. will last about 6 months.
Rhubarb Pork Chops
Ingredients:
1 cup (190g) rhubarb cut into 5 cm lengths
1 red onion cut into wedges
3 garlic cloves, crushed
1 tablespoon balsamic vinegar
olive oil for drizzling
1 tablespoon butter
2 rosemary sprigs.
2 pork chops
a box of rice roni with out season packet
1/2 cup broth
Instructions:
1. Heat oven to 400°f. In small oven safe pan, toss the rhubarb, onion wedges and garlic with the balsamic vinegar, and a little olive oil and some seasoning. Roast in oven for 20 minutes.
2. While waiting melt the butter over high heat fry the rosemary. Add the pork cook and brown on both sides then remove from heat. add the rice and broth, stir than place chops on top. Roast for another 20 minutes.

INGREDIENTS
2 cups roughly chopped rhubarb
1/3 cup plus 2 tablespoons sugar
1/2 stick cinnamon
4 tablespoons butter, softened
2 tablespoons honey
4 (6 to 8–ounce) bone-in pork chops
Salt and pepper
1 tablespoon canola oil
1 (16-ounce bag) frozen peas
1/4 cup chopped herbs (I like a mix of dill, mint, and chives)
Flaky sea salt, for topping
