How To make Potato Cabbage Casserole
1 1/2 lb Potatoes,Idaho,unpeeled(3lg)
Water,boiling 1/2 lb Bacon,cut into 3" strips
1 c Onion,sliced
2 tb Flour
1/2 ts Thyme,dried
1/2 ts Salt
1 1/2 c Beer(12oz)
1/2 c Milk
6 c Cabbage,fine shredded(1.5lb)
1 c Swiss cheese,shredded
1. Steam potatoes in 1 inch boiling water 30 to 40 minutes, or until
tender. 2. Slice potatoes, unpeeled, into 1/2-slices; set aside.
3. Cook bacon in a large skillet until crisp; set aside.
4. Pour off all but 2 tablespoons bacon fat; saute onion in same
skillet until golden. 5. Stir in flour, thyme and salt.
6. Gradually add beer and milk; stir, over low heat, until mixture
boils and thickens. 7. In 3-quart casserole, layer half the cabbage, potatoes, bacon,
cheese and sauce; repeat with remaining ingredients. 8. Cover and bake in preheated 375'F. oven 30 minutes.
9. Uncover and bake 15 minutes longer, or until cabbage is tender.

Healthy Cabbage Casserole
Ingredients for one 2-quart baking dish (about 4 servings as a main course; 8 servings as a side dish)
1/2 of a medium-size head of cabbage (about 500g)
1/2 to 3/4 teaspoon salt
4 large eggs
1/4 cup (58g) mayonnaise
1/4 cup (62g) sour cream or plain yogurt
1/4 cup (30g) all-purpose flour or a gluten-free substitute
1 teaspoon (4g) baking powder
1 teaspoon (4g) cornstarch
A pinch of black pepper
4 ounces (112g) or more finely-shredded Swiss cheese
Directions:
Preheat oven to 350°F (177°C).
Preparing the Cabbage -- Thinly slice the cabbage (as for coleslaw), and place it in a large bowl. Sprinkle with 1/2 to 3/4 teaspoons of salt. Mix with hands, and then massage the strands until they weep moisture and soften up -- about 30 seconds. Pour the cabbage into a greased 2-quart baking dish, and let it rest there for 5 minutes. Meanwhile, make the batter.
Making the batter -- Whisk the eggs in a medium bowl. One ingredient at a time, whisk in the mayonnaise and the sour cream (or yogurt). Add the flour, baking powder, cornstarch, and pepper. Whisk until fairly smooth -- about 30 seconds.
Assembling -- Pour the egg mixture over the cabbage. Stir with a spoon or spatula until all of the cabbage is coated. Sprinkle the cheese over the top of the casserole.
Baking -- Bake in the preheated oven until the casserole puffs and the cheese melts and turns spotty brown -- about 50 minutes.
Serving -- Allow the casserole to cool for at least 15 minutes, and then cut it into serving pieces. The casserole is delicious at any temperature -- even cold from the fridge!

Thank you Anne West for allowing me to tweak your recipe. I hope you like my variation which I call Comfort Stew. I made 3 changes to Anne's original recipe as follows:
1) instead of cooking the cabbage and potatoes in a crock pot I cooked them in a pressure cooker
2) I caramelized the onions first
3) I used 4 tablespoons of the white balsamic vinegar instead of 1.5 tablespoons
Anne brought a delicious dish of potatoes, cabbage and onions to a potluck. She made it in a slow cooker. I wanted to make it in the Instant Pot because when I put the 3 large onions one white, one yellow and one sweet) that the recipe called for into my crock pot it was full so I couldn't fit in the large amount of potatoes and cabbage the recipe called for. I figured since the onions were already in the crock pot I would just cook them in their using a recipe I saw here:
When the onions were done I drained them and put them aside and put their liquid in the 8 quart Instant Pot along with 2 pounds of red potatoes, cut into fourths, and a huge head of sliced cabbage. I added 2 teaspoons of minced garlic and 2 teaspoons of mustard seeds. I cooked on high pressure for 10 minutes. Release the pressure and stir in the caramelized onions and 4 Tablespoons of a reduced WHITE balsamic vinegar.
This was delicious served over rice.

This is a new cabbage and potato dish I made recently and the whole family and even the kids loved it! That's why I want to share it with you!
A few tips for you before cooking:
????????After washing the cabbage, dry it thoroughly with a paper towel.
???????? You can adjust the amount of cheese and vegetables as you wish.
????Recipe and ingredients ( 8 servings):
1/2 cabbage.
3 medium potatoes.
1 red onion.
2 carrots.
Dill and parsley.
5-6 garlic cloves.
4-5 eggs.
2 cups of flour.
1 tbsp of salt.
Olive oil.
Salt.
Pepper.
125g (5oz) cheddar cheese.
????Salad:
300g (10oz) cherry tomatoes.
1 red onion.
3 avocados.
Dill and parsley.
Juice of half a lemon.
Salt.
Olive oil.
