How To make Potluck Meatballs
1 egg
beaten
2/3 cup soft bread crumbs
1/2 cup grated onion
1 teaspoon salt
1/2 teaspoon ground allspice
1/4 teaspoon pepper
1 pound ground beef
1 tablespoon cornstarch
1 can condensed beef consomme :
undiluted
In a bowl, combine the first 6 ingredients; add beef and mix well. Shape into 1 1/4-inch balls. In a skillet over medium heat, brown meatballs; drain. Transfer to a greased 1 1/2-quart baking dish. Combine the cornstarch and the consomme until smooth; add to skillet. Bring to a boil, stirring to loosen browned bits from pan. Boil for 2 minutes or until thickened. Pour over the meatballs. Bake, uncovered, at 350 degrees for 50 to 60 minutes or until no longer pink.
Makes about 2 1/2 dozen meatballs.

This is the second installment of my kitchen basics series, and I am sharing my best ever homemade Italian meatball recipe. These meatballs are juicy, light, and the flavor is off the charts. It's all about using the 3 different meats for this meatball recipe and soaking some bread in milk to help lighten the meatball texture. I like to sear these these homemade meatballs in a hot pan to help form a tasty crust before finishing them in some homemade marinara sauce. Slow Cooker Barbecue Meatballs
SLOW COOKER BARBECUE MEATBALLS
Easy appetizer recipe or great as a main dish over mashed potatoes.
RECIPE:
INGREDIENTS:
40 oz. frozen meatballs (I use Safeway's Kitchen brand homestyle meatballs)
16 oz. Sweet Baby Ray's Original Barbecue Sauce
1 small white onion diced
SLOW COOKER SIZE:
4-quart or larger
INSTRUCTIONS:
Add the frozen meatballs to the slow cooker.
Add the diced white onion and barbecue sauce. Stir.
Cover and cook on high for 2.5 hours or on low for 4 hours. Stir occasionally so the meatballs won't burn on the edges.
Serve as an appetizer with toothpicks or as dinner on top of mashed potatoes or rice. Or you can serve on slider or hoagie rolls.
