This makes 1 large Pumpkin Spice Bundt Cake or one small (7 inch) Bundt cake with one dozen cupcakes as shown in the video (plus one layer 6 inch round, not shown in the video)
1 cup raisins with 1/2 cup orange juice simmered on the stovetop for ten minutes
All ingredients for the cake :
1 cup butter
1 + 1/4 cups sugar
1/2 cup packed brown sugar
1 + 3/4 cups pumpkin puree
4 eggs
1/2 cup buttermilk
3 cups all purpose flour
1 tsp baking soda
2 tsp baking powder
1/2 tsp ginger
1/2 tsp allspice
1/2 tsp nutmeg
2 tsp cinnamon
1/2 tsp salt
Ingredients for the Caramel glaze
1/2 cup brown sugar
1/4 cup butter
1 tsp water
1 cup sweetened condensed milk

A good pumpkin bread does not have to be complicated! Here’s a quick one using only 4 ingredients. It gives the perfect amount of sweetness, spice and pumpkin flavor. Add my homemade Cinnamon honey butter spread on a warm slice and you’ll be in Fall heaven! Don’t take my word for it, give it a try and thank me later!

* For the cake
1 box of Spice cake mix
1/4 cup vegetable oil
1 can pure pumpkin purée (Libby’s 15oz)
2 eggs
* For the Cinnamon Honey Butter
1 stick butter (salted)- can also use unsalted
1/4 cup pure honey
1 tsp ground cinnamon
Mix all the ingredients for the bread until well incorporated- avoid over beating the batter to maintain a moist bread. Bake @ 350 degrees Fahrenheit for 50-60 minutes (mine took 55 minutes) if using a 9x5 loaf pan.

Fall and pumpkin go hand in hand. This easy recipe for Pumpkin Bundt Cake will be one to share with family and friends. I hope you enjoy it as much as my family does.

Pumpkin Bundt Cake
1 (15.25 oz Box) Yellow Cake Mix or Spice Cake Mix
1 (15 oz Can) Pumpkin Puree (not pumpkin pie filling)
4 Large Eggs at Room Temperature
1/2 C. Milk (Whole or 2 %)
1/3 C. Vegetable Oil
1 T. Ground Cinnamon
1 t. Ground Ginger
1/2 t. Nutmeg
1 t. Ground Cloves
Optional:
1 C. Semi-Sweet Chocolate Chips
or
1 C. Chopped Walnuts
or
1 C. Chopped Pecans
Bake in a 10 C. Bundt pan @350 degrees 55-65 minutes or until tester comes out with just one crumb or no crumbs. Cake will be golden brown.
Top with powder sugar or cream cheese frosting (recipe below)
Cream Cheese Frosting:
1 (8 oz block) Soft Cream Cheese
1 & 1/2 Sticks Soft Salted Butter (12 Tablespoons)
1 & 1/2 C. Confection's Sugar
1 t. Vanilla Extract
(1-2 Tablespoons of milk if need be)
Refrigerate frosting while cake cools. Also, be sure to refrigerate any leftover cake.

BAKE @ 350 ºF / 176 ºC for 50 minutes. Cool and set for 30 minutes.

Learn how to make Tres Leches Pumpkin Cake - the perfect sweet treat, a delicate pumpkin spice cake filled with tres leches mixture and topped with maple whipped cream. This is a delicious twist to a classic tres leches cake by adding pumpkin puree to make a new pumpkin superstar! Pumpkin cake:
1 cups granulated white sugar
1/2 cup brown sugar (packed)
15 oz (1 can) pure pumpkin puree (NOT pumpkin pie filling)
3/4 cup vegetable oil
2 teaspoons pure vanilla extract

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda

Tres leches filling:
1/2 cup heavy whipping cream
12 oz evaporated milk (1 can)
14 oz sweetened condensed milk (1 can)

Maple whipped cream frosting:
1 1/2 cups heavy whipping cream (cold)
1/4 cup confectioners' sugar
1 tablespoon maple syrup
1 teaspoon maple extract
1 teaspoon cinnamon
Ground cinnamon (for dusting the top, optional)

Recipe: Pumpkin Spice Cake
This pumpkin spice cake is soft, moist and delicious. Highly recommended!
Pumpkin Spice Cake:
1 cup (250g) butter
1/2 cup (110mL) oil
1 cup (200g) sugar
1/2 cup (100g) brown sugar
4 eggs
1 tbsp vanilla extract or 3 tbsp vanilla sugar
2 cups (500g) pumpkin puree
1/4 cup (60mL) milk
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp pumpkin spice
3 tsp cinnamon
2 1/2 cups (315g) flour
Cream butter, oil and sugars until light and fluffy. Beat in eggs one at a time. Stir in vanilla, pumpkin puree and milk. Add dry ingredients in three or four amounts, stirring between each addition. Pour into a lined and greased baking pan. Bake at 325°F or 160°C for 35-50 minutes or until toothpick inserted into the center comes out clean.
