How To make Purple Plum Pie
4 cups fresh plums (about 1 1/2 pounds) -- sliced
1/2 cup sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1 tablespoon lemon juice
1 unbaked deep-dish pastry shell (9 inches)
Topping: 1/2 cup sugar
1/2 cup all-purpose flour
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 tablespoons cold butter or margarine
In a bowl, combine the first six ingredients; pour into the pastry shell. For topping, combine sugar, flour, cinnamon, and nutmeg in a small bowl; cut in butter until the mixture resembles coarse crumbs. Sprinkle over filling. Bake at 375 degrees for 50-60 minutes or until bubbly and golden brown. Cover edges of crust during the last 20 minutes to prevent overbrowning.

Ingredients - Pie Dough
* 100 g all purpose flour**
* 100 g spelt flour**
* 70 g of butter
* 50 g ground walnuts - you can substitute with additional spelt flour if you do not have nuts
* 4 tbs of sugar
* 3 yolks
* about 2 spoons of water
** Alternatively you can use just 1 type of flour - all purpose flour or spelt flour. Then use 200 g of flour.
Knead all together and let it cool in fridge for 30 min.

* 60 g of butter
Cook plums for about 10 min

Preparation of baking plate
* 1-2 spoons of flour
* 10 g of butter
Roll out plum dough in a baking plate, add filling and sprinkle with crushed nuts and then bake pie in a hot-air oven at 170 degrees Celsius for 40 minutes.

500 Plums
Lemon zest
3 tablespoons (37g) Brown/white Sugar
30g Cornstarch
For the crumble:
1¼ (125g) Rolled oats
1 cup (125g) Plain flour or whole wheat flour
1/2 cup (115g) Butter, softened
1/4 cup (50g) Brown/white sugar
1 teaspoon Baking powder
Pinch Salt
Directions:
1. Preheat oven to 180C (350F). Line the bottom and the sides of a 8-inch (20cm) round cake pan with parchment paper.
2. Prepare the filling: cut the plums in half, remove the pit, then cut each half into 3-4 pieces. Transfer the plums into a large bowl and add sugar, lemon zest and cornstarch. Mix well and set aside.
3. Make the crumble: in a large bowl, mix oats, flour, salt, sugar and baking powder. Add softened butter and rub with your fingertips until the mixture resembles crumbs.
4. Assemble the cake: spread half of the crumble on the bottom of the pan. Using a spoon or the bottom of a glass, press evenly the mixture. Them spread the filling on top of the crust. And sprinkle the remaining half of the crumble on top.
5. Bake for 30-35 minutes.
6. Release from the pan and serve with vanilla ice cream.
