3-Ingredient Peanut Butter Cookies
Here is what you'll need!
3-INGREDIENT PEANUT BUTTER COOKIES
Makes 25-30 cookies
INGREDIENTS
1 cup peanut butter
½ cup sugar
1 egg
PREPARATION
1. Preheat oven to 350ºF/180ºC.
2. In a large bowl, mix together the peanut butter, sugar, and egg.
3. Scoop out a spoonful of dough and roll it into a ball. Place the cookie balls onto a nonstick baking sheet.
4. For extra decoration and to make them cook more evenly, flatten the cookie balls by pressing a fork down on top of them, then press it down again at a 90º angle to make a criss-cross pattern.
5. Bake for 8-10 minutes or until the bottom of the cookies are golden brown.
6. Remove from baking sheet and cool.

NO-BAKE OATMEAL ENERGY BALL RECIPE
1 cup rolled oats
1/2 cup flax seed meal aka ground flax seeds
1/2 cup crunchy peanut butter
1/3 cup honey
1 tsp. vanilla extract
1/2 cup mini chocolate chips
INSTRUCTIONS
Combine all ingredients in a medium-sized bowl and mix well.
Roll about 1 tbsp. of the dough between your palms to form a small bowl. Place on a plate or a rimmed baking sheet and pop in the fridge or freezer for one hour. Enjoy!
I usually transfer to an airtight container and store them in the fridge for up to 3 weeks.
Makes 20 balls.

1¼ cups of Quick Oats, toast in the skillet until golden brown
½ cup of Creamy Peanut Butter
⅓ cup of Honey
1 teaspoon of Pure Vanilla Extract
1 cup of Sun-Maid Natural California Raisins
Combine all of the ingredients in a large bowl, stir it together using the wooden spoon or a rubber spatula. Once after you mix together, you want to scoop one inch balls of the mixture using the smaller sized ice cream scooper, roll each balls with your clean hands, then place it onto the cookie sheet lined with some wax paper, and refrigerate for 30 minutes. After 30 minutes, take it out of the refrigerator while ready to try. You can store these snack balls back in the refrigerator into airtight container for up to about two weeks, or one day at a time for later.
This recipe will makes 24 snack balls.

These simple No-Bake Oatmeal Energy Balls, offer a healthy boost right when you need it... And they taste just like oatmeal cookies!
Energy Balls are sweet, no bake treats that take minutes to throw together, and make quick and easy breakfasts/snacks.
Ingredients
* 1 ½ cups quick rolled oats
* 1/3 cup flax seed powder
* 1/3 cup unsweetened shredded coconut
* 1 cup nut butter (peanut, almond, cashew)
* 2 teaspoons vanilla extract
* 1 teaspoon ground cinnamon
* ½ teaspoon salt
* ½ teaspoon ground nutmeg
* 1/3 cup maple syrup
* 1/3 cup raisins
* 1/3 cup chocolate chips
Instructions
* Add the oats, flax seed powder, coconut, nut butter, vanilla, cinnamon, salt, nutmeg, and maple syrup. Turn the food processor on high and mix until the ingredients form a thick consistent crumble.
* Add in the raisins and chocolate chips. Mix these ingredients in by hand.
* Use a 1 ½ tablespoon cookie scoop to portion out even balls of dough. Roll the dough into tight balls.
* You can serve right away too. Enjoy!
* Store leftover energy balls in an airtight container in the refrigerator for up to 2 weeks
Notes
Place the flax seeds in a food processor. Grind the flax seeds until they start to break up. (They do not have to be fully ground into powder)
