How To make Rhubarb Mint Chutney
1 tb Butter
1 sm Onion; minced
3 c Rhubarb; chopped
2/3 c Granulated sugar
1/4 c Lemon juice; fresh
1 ts Mint
1/2 ts Lemon zest; grated
Melt butter in large skillet over medium heat; cook onion for 3 minutes or until soft. Add rhubarb, sugar, lemon juice, mint and lemon zest. Bring to boil, stirring to dissolve sugar. Reduce heat and simmer, uncovered, for 5 to 7 minutes or until thickened. Season to taste with salt and pepper. Chutney can be prepared, cooled, covered and refrigetated for up to 2 days. Serve with lamb

The easiest rhubarb recipe that exists. At least of those I know. An unusual way to cook rhubarb, and one that can be used for many things. For example, I have used it as sour-sweet accessories for salmon tartare, yogurt, as a side for braised meat, in smaller pieces in a salad or on / in my homemade sorbet or in cakes etc. Only the imagination sets the limit.
You also get a good rhubarb syrup out of it which you can lighten up with a little water and use as lemonade, or in a rhubarb mojito.

A chutney is a family of condiments or sauces in the cuisines of the Indian subcontinent.
In this recipe I am infusing the South Indian flavours with the tartness of rhubarb. This is a coconut based Chutney.
Enjoy the Chutney with Dosa or Idly..............
Completely vegetarian, simple, easy to make and healthy
Step 1............
Making Chutney............
Coconut - half (grate)
Shallot - 4 pieces (cut half)
Rhubarb - 1 + half stack
Green chilli - 5 pieces (slit)
Ginger - 1 teaspoon (chop)
Coconut water - 25 ml
Curry leaf - few
Salt - half teaspoon
Method..........
Using a blender
Blend coconut, shallots. Rhubarb, green chilli, ginger, curry leaf, coconut water and salt
Using a spoon mix all the ingredients in between
Make into a fine paste
Remove the Chutney to a bowl
Step 2........
Tempering the Chutney...........
Coconut oil - 1 tablespoon
Curry leaf - few
Mustard seed - half teaspoon
Dry red chilli - 2 pieces
Method.........
Heat a pan to medium
Add the mustard seed let it sputtering
Add curry leaf
Add hand torn dry red chilli
Sauté for 30 seconds
Step 3.......
Final touch...............
Add the hot tempering to the Chutney
Mix the Chutney with a spoon
Enjoy!!!!!!!!!!
Note & Tips
.use coconut water instead of regular water when blending
.when tempering make sure mustard seeds sputtering

Rhubarb pie ingredients
Rhubard 600gr
2 dl sugar
2 tbsp potatoes or corn flour
Pastry
150 gr butter
3 dl plain flour
2 dl Oat meal
1 dl sugar
Rhubard chutney
Rhubard 700gr
2 dl sugar
1 tbsp crushed ginger
1 large red onion
1 tbsp curry powder
1 teaspoon salt
3 - 4 tbsp balsamic vinegar

Recipe for Rhubarb Mint Salsa
For each 1 cup Rhubarb
add 1/4 cup chopped mint and
2 Tbsp Red Pepper Spice Blend
Simmer til rhubarb is tender adding a spoonful of water as necessary to keep it saucy. This recipe may be made in huge quantities for freezing or canning. Use canning recommendations for stewed rhubarb no sugar added.
