Best Ever Guacamole Recipe
Homemade guacamole is one of my favorite things to eat! Creamy, packed with flavor from garlic and onion, spicy jalapeños, fresh tomato, and zesty lime juice. This guacamole is insanely delicious and super-easy to make (under 5 minutes), serve it with tortilla chips for an easy party dip or load it on top of nachos or tacos to take your dinners to the next level!
RECIPE:
This guacamole recipe will keep just fine in the fridge overnight it you cover the surface with plastic wrap so it doesn't oxidize. The acid from the lime juice keeps it nice and green. Let me know what you like to enjoy it with!

More than any recipe in the Mexican canon of classics, guacamole evolves and transforms into what the cook likes or what is right for the occasion. In Mexico, guacamole tends toward simple because it’s most often destined to be a condiment for tacos and the like.
In the U.S., guacamole explodes with complexity, often chock-full of vegetables, since here we almost always scoop it up with chip after chip. While many contemporary creations have been written (I confess to have written many of them myself), there is a traditional foundation from which all of them spring: Coarsely mash thoroughly ripe avocados, seasoning with salt and just enough lime to brighten (but not overwhelm) the avocado richness.
Add emblematic Mexican vegetables to suit your own taste: white onion for fresh crunch, ripe tomato for sweetness, fresh green chile for that spicy zing, and cilantro for herby aroma. It’s that simple, though this approach requires the one in charge of preparation to understand the role of each ingredient they’re adding and to taste regularly until the perfect balance is achieved. So making your perfect guacamole requires a fair amount of experience, of trial-and-error. But I can think of quite a few less rewarding endeavors.

Ingredients:
- Avocado : 1 Medium
- Jalapeno: 1( sliced) or Green chillies :1-2 nos.
- Onion : 1 Small ( chopped)
- Coriander leaves : 1/4 Cup
-Lime juice : 1-2 Tbsp
- Salt : As per taste
Note : If Jalapeno is not available use Green Chilli .
#Tomato corn Salsa#
Ingredients:
- Tomato: 1 Cup ( chopped)
-Capsicum(mixed color): 1 Cup ( chopped)
-Onion: 1 Medium
-Jalapeno:1(sliced) or Green chilli : 1-2 nos.
-Coriander leaves : 1/4 Cup
-Fresh corn: 1/2 Cup (boiled)
-Lime juice: 1-2 Tbsp
-Salt:As per taste
-Oregano: 1Tsp
-Black pepper powder : 1/2 Tsp
-Roasted cumin powder: 1Tsp
-Sugar: 2Tsp ( optional)
- Chipotle chilli :1Tsp or Kashmiri lal mirch powder : 1 Tsp
Note : If Jalapeno is not available use Green Chilli .
#Salsa Verde#
Ingredients:
-Roasted Tomatoes: 2nos.
-Roasted Garlic cloves: 4 nos.
-Roasted Jalapeno : 2 nos. Or Green Chillies 3-4 nos.
-Onion: 1 Small (chopped)
-Coriander Leaves: 1 Cup
-Lime juice: 1-2 Tbsp
-Salt : As per taste
Note : If Jalapeno is not available use Green Chilli ( unroasted)
#Extra Hot Red Salsa#
Ingredients:
-Roasted Tomatoes: 2nos.
-Roasted Garlic cloves: 4 nos.
-Roasted Jalapeno : 2 nos. Or Green Chillies 3-4 nos.
-Onion: 1 Small (chopped)
-Coriander Leaves: 1/4 Cup
-Lime juice: 1-2 Tbsp
-Salt : As per taste
-Chilli Chipotle Or Kashmiri lal mirch powder: 2 Tsp
-Red Chilli Sauce: 2 Tbsp
- Tomato Ketchup: 2 Tbsp
- Extra hot red chilli powder: 2 Tsp
- Black Pepper powder: 1 Tsp
Note: If Jalapeno is not available use green chilli ( unroasted)

1 Roma toma
1/2 small onion

Recipe for Veg. Mexican Burrito Bowl / वेज बरिटो बाउल रेसिपी
Fortified with Tofu
Ingredients
¾ cup rajma / kidney beans, boiled
1 cup rice
3 Medium Sized tomatoes, finely chopped
1 Medium Sized avocado
1 tbsp extra virgin olive oil
2 tbsp olive oil
1 tbsp butter
1 tsp green chili paste
1/2 tsp ginger paste
1 tsp lemon juice
1 big onion, finely chopped
7 cloves garlic, finely chopped
1 green capsicum, finely chopped
3 tbsp fresh cream
3/4 cup hung curd
6-7 slices tofu, pan fried
1/2 cup parsley, fresh
4 tsp dried oregano
1.5 tbsp red chili flakes
2 tsp red chili powder
2 tsp chipotle chili powder
6 (15 slices) jalapenos
Salt to taste
Recipe method:
1. Cook rice as instructed in the video.
2. In the meantime, make sour cream- Take hung curd and add fresh cream to it. Mix well. Add salt and ½ tsp lemon juice. Mix well and refrigerate for 30-45 minutes
3. Make salsa- Take ½ tbsp olive oil in a pan. Sauté garlic and onions. Add green capsicum and cook till they become soft. Add 2 tsp oregano, 1 tsp chipotle chili powder, 1 tbsp red chili flakes and 1 tsp red chili powder. Add tomatoes and some salt. Cover and cook for 12-15 minutes.
4. Check on the rice. If required add a little water and cook for 5-7 minutes. Strain and let the rice cool down.
5. Make guacamole- Scoop the avocado using a spoon and blend in a blender along with chopped garlic, extra virgin olive oil, ginger and chili paste and salt. Remove in a bowl and add lemon juice. Mix well. Guacamole is ready.
6. Check salsa- Add salt to taste and sugar. Add ¼ cup fresh parsley and mix well. Chunky salsa is ready.
7. Now add butter and olive oil to a pan and pan fry the tofu slices till a little golden brown on both sides. Sprinkle a little taco seasoning to cover both the sides. Remove in a plate.
8. Now add butter and olive oil to that pan and add cooked rajma. Add oregano, chipotle chili powder and taco seasoning. Mix well. Add some of the tofu slices. Add cooked rice and mix carefully.
9. Now, add red chili powder and red chili flakes along with some lemon juice. Mix carefully. Our burrito rice is ready.
10. Check on the sour cream- mix with a spoon- it will be creamy and thick.
11. Now, assemble the burrito bowl as shown in the video- starting with rice-guacamole-rice-sour cream- salsa- more guacamole- sour cream- tofu slices-jalapeno slices- grated cheese- parsley. Serve with some tortilla chips and a slice of lemon.
