1 c Sugar 2 tb Cornstarch 1/2 c Lemon juice Rind of 1 lemon, grated 1/2 c Butter 2 tb Brandy 1/4 ts Nutmeg or cinnamon 1/2 c Light rum 2 tb Dark rum Blend the sugar and cornstarch in 1 cup of boiling water. Cook stirring constantly over medium heat until the mixture begins to thicken. Add remaining ingredients and cook for 2 minutes, stirring constantly. Serve hot over mince pie, pound cake, or pudding. How to make THE BEST Caribbean Rum Cake w/ Butter Rum Glaze
This recipe was shared with me by a good friend of mine from Panama. She makes this cake for family and social gatherings. It has become a favorite of mine to make during the holidays, especially on New Year's Eve. Enjoy!
Caribbean Rum Cake 1 C. Chopped Pecans (optional) 1 Box Yellow Cake Mix 1 Box Jell-O Vanilla Pudding Mix (3.4 oz) which is the 4 1/2 C. serving size. 1/2 C. Vegetable Oil 1/2 C. Coco Lopez Cream of Coconut (can be substituted for water) 4 Large Eggs at Room Temperature 1/2 C. Dark Rum
Bake @ 325 degrees 50-60 minutes or until cake is golden brown and tester comes out clean.
Glaze: 1 Stick (1/2 Cup) Salted Butter; if using unsalted butter, add a pinch of salt. 1 C. Granulated Sugar 1/4 C. Water Cook for 8 minutes without stirring. 1/2 C. Dark Rum (add when flame is turned off)
Serve with whip cream, maraschino cherries or grapes dusted with powder sugar. Enjoy!

Mama Sue makes BREAD PUDDING WITH BUTTER RUM SAUCE.
Bread pudding is one of my favorite desserts. There are several restaurants near me that have Bread pudding on their menus and I always order. I asked a manager if he shared his recipe once and he said that he didn't (I understood). Later he came back to the table and said his secret is the sauce which was a Butter Rum sauce. I tried putting different recipes together and came up with this one which is very close in taste. It has more ingredients than I usually share but it's so worth it. It's not hard but does take time for the bread to soak up the milk mixture. Don't let the look of the ingredients keep you from trying it some time.

Drizzle over John's Plantain Bread Pudding (here on how2heroes YouTube Channel), ice cream, coffee cake, or any dessert that calls for some extra oomph. Once made, the sauce can be refrigerated for later use. Just give it a quick turn in the microwave as its best served warm.

You can do a lot of great things with rum. Make rum balls, soak a chocolate cake, pour it into a glass of cola, and of course, entertain pirates, but maybe my favorite thing to do with rum, especially around the holidays, would be to butter it. Enjoy!
