Rye And Coke Cake Recipe - Glen And Friends Cooking This is the Coca Cola Cake you've always wanted to make... Whiskey and Coke are a great combination.
Cake Ingredients 250 mL (1 cup) butter, softened 500 mL (2 cups) sugar 4 large eggs 10 mL (2 tsp) vanilla extract (optional) 750 mL (3 cups) all-purpose flour 125 mL (½ cup) cocoa 5 mL (1 tsp) baking powder 2 mL (½ tsp) baking soda 5 mL (1 tsp) salt 250 mL (1 cup) Coke 60 mL (¼ cup) buttermilk 60 mL (¼ cup) whiskey (or your favourite spirit)
Glaze 125 mL (½ cup) butter 250 mL (1 cup) brown sugar 30 mL (2 Tbsp) Coke 30 mL (2 Tbsp) whiskey (or your favourite spirit)
Method: Preheat the oven to 350ºF. Grease and flour a 10-cup bundt pan. Cream together the butter and sugar. Beat in the eggs, and vanilla. Whisk together the flour, baking powder, baking soda, and salt. Mix together the buttermilk, coke, and whiskey. Alternate mixing the dry and liquid ingredients into the butter mixture. Mix just until combined. Pour the batter into the bundt pan and spread evenly. Bake for 50 to 60 minutes, just until a cake tester inserted in the centre comes out clean. While the cake is baking; make the glaze. Melt together the butter and brown sugar; stirring until the mixture comes to a boil. Continue cooking until the sugar is fully dissolved. Remove from the heat and stir in the Coke and whiskey. While the cake still in the pan, poke holes all over the bottom of the cake. Spoon about ½ of the glaze over the cake, so it soaks in through the holes. After turning the cake out onto a plate; drizzle the rest of the glaze over the top of the cake.

**Spiced Honey and Rye Cake**
Welcome to Katrina's Dough-Jo! I'm an amateur home baker that loves to bake and I'll be baking my way through Claire Saffitz's Dessert Person to improve my baking skills. I'm also documenting my journey on my blog:
I'm starting with the first recipe **Spiced Honey and Rye Cake**. This recipe is rated Very Easy and can be baked any time of year. It takes approximately 1.5 hours and doesn't contain any dairy.
Most of the ingredients I already had in my pantry, but I did need to buy a few things: rye flour, allspice, and cloves. I’ve never baked with rye flour before, and I don’t normally use allspice or cloves in my everyday cooking. I also used ground nutmeg because I already had it. And instead of sugar, I used monkfruit sugar. If you also use that, make sure you don’t do a 1:1 replacement. Monkfruit sugar is 150 to 200 times sweeter than sugar.
This one was a baking success! It was very straightforward and in no time at all, my apartment was filled with the delicious aroma of spices and home-baked goodness. Letting it cool before trying it was probably the hardest part. I was afraid it would turn out too sweet because I used monkfruit sugar as a 1:1 replacement, but thankfully it turned out okay. My boyfriend and I tried it plain, with butter, and with honey and honey was the best topping. It goes great as dessert or with some black coffee in the morning for breakfast. It lasted around 4 days for us and we ate every last bite!
