How To make Saganaki (Fried Cheese)
Karen Mintzias 1/3 lb Kefalotyri or kasseri cheese
2 tb Butter
1 Lemon (juice only)
Cut the cheese into bite-sized cubes. Melt the butter in a "saganaki" (or another frying pan), and fry the cheese on all sides until crusty and chestnut colored. When preparing a Greek saganaki recipe, the key is to pick the right kind of cheese. It has to be firm to hold-up well against the heat. The cheese which is traditionally used in Greek saganaki recipe and are the best options to prepare a cheese saganaki are the Greek cheeses graviera, kefalograviera, kefalotyri, which are hard yellow cheeses, while regional variations may use Cypriot halloumi or mastello from Chios island. Use Kefalograviera for Greek fried cheese. This sheep's milk cheese has a salty taste. Drizzle with fresh lemon juice before eating and make sure it is HOT.
I have seen many recipe variations of this cheese, but when I ate it in Greece, it was simple with flour, olive oil, and lemon, always served square shaped.
