How To make Salted Eggs
1 1/2 c Rock salt
4 c Fresh water
12 Fresh eggs, preferably duck
-eggs Bring water and rock salt to a boil; cool. Place eggs in a crock or glass jar. Pour salt-water mixture over eggs to cover. Cover crock and let stand in a cool place (not refrigerator) for three weeks. Remove eggs from salt bath and store them in the refrigerator if not ready to use immediately. Yolks should be a bright yellow-orange color and quite firm. The white should be slightly cloudy and still runny. Eggs without a firm yolk should be discarded. To hard cook, cover with fresh cold water and simmer for 20 minutes. Shell an quarter. Serve with hot rice or congee. NOTE: Salted duck eggs may be purchased in mud-pack form or in brine in Oriental markets. If in mud pack, scrape off mud, wash well and proceed with recipe. Let’s prepare some ingredients for the moon festival! The Chinese Mid-Autumn festival is approaching. That means it’s almost time to make mooncakes! If you want to learn how to make homemade mooncakes for this year, in today’s video I will show you how to make salted eggs for your mooncakes.
If you have tried mooncakes before, you might already know that there is a salted egg yolk, commonly from a salted duck egg, 咸蛋 in the center. They say that the yolk in the mooncake represents the full moon. I always loved the salted egg yolk, 咸蛋 in the mooncake. So with today's homemade recipe we will learn how to make chinese salted egg to use for mooncakes!
There are different ways to salt your eggs. The salted egg recipe that I will be showing you today only requires 3 ingredients.
I will be using chicken eggs for my salted eggs. If you're using chicken eggs for your salted egg yolk recipe, the salting time takes 4 - 5 weeks. If you use duck eggs the salting time for the salted duck egg recipe might take longer, approximately 6 - 8 weeks. Salted Duck eggs will have an oilier and bigger yolk than chicken eggs, that makes the duck eggs a bit more creamy. I used chicken eggs for my mooncakes and they still turned out amazing!
A good quality salted egg should have a bright orange and firm yolk.
Salted egg is a very popular Chinese ingredient. It is used in many desserts and pastries like zongzi and mooncake. You can also use it for regular cooking to bring a rich oily salty flavor to your dish.
Tip: How to check when the salted egg yolk is ready? You can crack an egg and the yolk should be bright orange and firm to the touch. You can also boil an egg and taste if the yolk is salty enough/to your liking.
