Cracker Toffee Recipe | Southern Living
What is tasty, easy to make, and serves as the easiest food gift during the holidays? Cracker Toffee. When saltine crackers came out in 1876, Southerners made sure they worked the soda cracker into a multitude of recipes. Alabama Firecrackers are all over the place during the summer, and many Southerners took a short cut when making toffee during the holidays. A saltine cracker is the perfect base for the chocolate and sugar confection. Of course, no one could actually agree on a name so this dessert has many: Cracker Toffee, Cracker Candy, Pine Bark, Toffee Bark, Faux Toffee, Saltine Sweeties, Fooler Toffee, and Christmas Crack. There are also many ways to make the toffee special by just switching up the ingredients. You can swap out the type of chocolate and/or nuts. How about dark brown sugar, butterscotch morsels, and toffee chips? Give your toffee a holiday touch with crushed candy canes in place of the nuts. All you have to do is maintain the concept and ratios and your toffee will turn out great. Most of the ingredients keep well in the pantry, so you can whip out a tray of this fine candy on short notice.

1 sleeve saltine crackers (about 48), 1 cup (2 sticks) butter, 1 cup firmly packed light brown sugar, 12 ounces bittersweet chocolate morsels, 1/2 cup chopped pecans or other nuts

Easy Almond Roca Chocolate Covered Saltine Crackers

1 c. butter
1 c. brown sugar
40 whole saltine crackers
12 oz. pkg. semi-sweet chocolate chips
1/2-1 c. finely chopped nuts, optional
Lightly grease bottom of large jelly roll pan. Melt butter and sugar in saucepan. Bring to a boil and boil 2 minutes, remove from heat. Line jelly roll pan with 40 whole saltine crackers and pour sugar mixture over crackers to cover. Bake at 350 degrees for 5 minutes, until bubbling all over. Watch carefully. Remove and cover with chocolate chips. Let melt before smoothly spreading over crackers. Cover with finely chopped nuts. Refrigerate to harden.

It was tricky getting the stuff up off the bottom of the jelly pan. Spray and then maybe spray some more ;)
It makes a LOT ... we never finished it. It has sat for at least 2 weeks in the fridge, so if you have a small family, give some away!!

Today I'm sharing the perfect treat for Christmas time--MINI Christmas Crack (also known as Cracker Toffee)! Salted caramel oyster crackers are drizzled with melted dark chocolate for a tasty and adorable sweet & salty snack.

Mini Christmas Crack (single recipe)
adapted from
1 bag (4 cups) oyster crackers
3/4 c. brown sugar
3/4 c. butter
2 tsp. vanilla extract
kosher salt
5 oz. dark chocolate melting wafers
Preheat oven to 350*. Line a rimmed baking tray with parchment paper and spray with baking spray. Pour the oyster crackers out in a single layer. In a medium saucepan over medium heat, melt the butter. Add the brown sugar and stir until dissolved. Bring this mixture to a boil. Boil and stir constantly for 3-4 minutes. Pour evenly over the oyster crackers. Use a rubber spatula to toss the oyster crackers in the caramel mixture so that every cracker is evenly coated. Sprinkle lightly with kosher salt. Bake at 350* for about 5-7 minutes--watch carefully so you don't burn the sugar! Remove and cool completely. Place the dark chocolate wafers in a microwave safe bowl. Melt in 30 second increments, stirring in between, until totally smooth. Drizzle the chocolate all over the crackers. Allow to cool completely at room temperature. Break the crackers apart. ENJOY!
Store in an airtight container.
