How To make Savory Lamb Kabobs
1 Leg of lamb; 4 lb.
1/2 c Soy sauce
1/2 c Wine vinegar
1 c Vegetable oil
6 Garlic cloves; minced
1 1/2 tb Sugar
3/4 ts Pepper
2 lg Green peppers; 1" pieces
18 Cherry tomatoes; to 24
18 sm Onions; to 24
Remove fell (tissue-like covering) from leg of lamb; cut meat into 1-inch cubes, and set aside. Combine soy sauce, vinegar, oil, ggarlic, sugar, and pepper. Add lamb; cover and marinate overnight in refrigerator. Remove meat form marinade, reserving marinade. Alternate meat and vegetables on skewers. Grill 15 to 20 minutes over medium coals or until desired degree of doneness, brushing often with marinade. SOURCE: Southern Living Magazine, sometime in 1980. Typed for you by Nancy Coleman.

LAMB KOFTA KEBABS Recipe
Follow this recipe for the most delicious Lamb Koftas.
Ingredients:
1 pound of ground lamb
1/2 yellow onion
3-4 garlic cloves
Parsley
olive oil
2 teaspoons cumin
2 teaspoons of coriander
2 teaspoons of smoked paprika
1 1/2 to 2 teaspoons of cinnamon
1/4 to 1/2 teaspoon of cayenne pepper
Salt
Black Pepper
Yogurt Sauce:
Greek Yogurt ( a small container)
2 minced cloves of garlic
1/2 teaspoon of cumin
1 tablespoon of lemons juice
pinch of salt

Marinade (per 500g meat):
80ml onion juice (roughly 1 large onion strained)
100ml whole milk
3 Tbsp olive oil
2 Cloves of Garlic
30g Red Pepper Paste - or tomato paste
1 Tsp salt (If you are doubling or tripling the recipe, make sure you do not exceed exactly 1 tsp per 500g, everything else can be rough except the salt)
1/2 Tsp Pul Biber or Aleppo Pepper
1 Tsp oregano
1/2 Tsp black pepper
Ezme:
3-4 Plum Tomatoes
1 Onion
2 Green chillies
2 Red chillies
1 clove of garlic
30g parsley or 18g minced parsley leaves
1 Tbsp red pepper paste
1 Tsp Dried Mint
1 Tsp Sumac
1 Tsp Pul Biber or Aleppo Pepper
1 Tsp Salt
1 Tsp Black Pepper
1 lemon juiced
1 Tbsp pomegranate molasses

Lamb Skewers w/ Red wine & herb marinade ????????????

Ingredients:
• 1 lbs. lamb stew meat (cubed is fine)
• 2 C red wine
• 1 1/3 C olive oil
• 1 1/3 C balsamic vinegar
• 2/3 C Worcestershire sauce
• 2 T Italian herbs seasoning
• 8-10 garlic cloves, minced
• Parsley, to garnish (optional)
Procedure:
1. Combine the red wine and next 5 ingredients in a bowl and mix until combined.
Note: this makes A LOT of marinade. I did this on purpose to have enough of the mixture to marinade the meat and some left over to reduce into a sauce. We’ll get to that later.
2. Place the lamb in a Ziploc bag or air-tight container and ½ - 2/3 of the marinade. Place the marinated lamb in the fridge for at least 4 hours and up to overnight. Refrigerate the unused marinade until ready to use.
3. When ready to cook, remove the lamb from the fridge and discard the marinade from the Ziploc bag. Pat the lamb dry, then begin adding the meat onto skewers, packing tightly but leaving enough room at the bottom so you can handle the skewers.
**Note: If using wooden skewers, it’s best to let them sit in water for an hour or two to prevent them from burning.
4. Next, preheat your grill to 500 degrees (or another high setting). Once preheated, add the lamb skewers, flipping every few minutes until they develop a nice char on each side and the internal temperature registers 125-130 degrees. Remove the skewers from the grill and turn off the heat source.
To Finish:
1. Now it’s time to use the rest of that marinade we saved from earlier. Place the reserve marinade in a skillet over medium heat and bring to a simmer. Once simmering, reduce the heat to low and continue cooking until the marinade has reached a spoon-thick consistency. Pour the reduction into a serving bowl and turn off the heat source.
2. Back to the lamb. Plate the lamb skewers on a bed of couscous (suggestion – pick your side of choice) and top with the reduction made in the previous step. Garnish with parsley if desired, serve, & enjoy!

BBQ Lamb Skewers - Tips and Techniques for the Perfect Flavor

BBQ Lamb Skewers
Ingredients/Utensils
• Lamb shoulder chops (preferably fresh – preferably New Zealand Spring Lamb) (only use shoulder chops – they are best as you need that extra fat)
• Salt to taste
• Wood (or metal) skewers
• Paper towels
Note: 1 lamb shoulder chop, will make 3 – 4 skewers
Directions
• Preheat the BBQ on high
• Soak wood skewers in water (5 mins)
• Scrap the top and bottom of the lamb chops with the back side of a knife (or use a butter knife) to remove any residue
• Dry each lamb chop with paper towel
• Cut lamb into thin strips, about ¾ inch thick and then cut into 3/4 “squares.
• Thread lamb pieces onto skewers, so that they are just touching, but not packed tight
• Generously salt the lamb to taste, on both front and back sides
• Place on BBQ and with lid open, grill for ~4 mins
• After ~4 mins, turn skewers over, and cook the other side for ~4 mins, again, with lid open (note: lamb needs to be well done)
• Remove and serve right away – must be eaten hot
• Enjoy!
