How To make Savory Lamb Stir Fry
2 Lamb leg center steaks, cut
1 Inch thick (approx. 1 1/2
-Ibs.) 2 tb Fresh lemon juice
2 tb Olive oil, divided
2 ts . cornstarch
2 Cloves garlic, crushed,
-divided 1 t Dried oregano leaves,
-crushed 1/2 ts Salt
1 md Red bell pepper, cut into
-l/s-inch strips 4 Oz's mushrooms, sliced
Combine lemon juice, 1 tablespoon oil, cornstarch, 1 clove garlic, oregano and salt. Trim excess fat from lamb steaks; remove bone. Cut lamb across the grain into l/s-inch thick slices. Place lamb in plastic bag; add marinade, turning to coat. Close bag securely and marinate in refrigerator 30 minutes. Heat remaining 1 tablespoon oil in wok or large non-stick skillet over medium high heat. Add 1 clove garlic; stir-fry 10 seconds. Add bell pepper and mushrooms; stir-fry 2-3 minutes. Remove vegetables, keep w arm. Stir-fry lamb (I/2 at a time) 2-3 minutes. Return lamb and vegetables to pan; heat through. Makes 4 servings. PREP TIME: 20 minutes. Marinate: 30 minutes. Coriander & Cumin – 1 tsp
Chilli Powder – 1 tsp
Black Pepper – ½ tsp
Dried Mint – ½ tsp
Fenugreek Leaves – 1 tsp
Salt – ½ tbsp
Dried Thyme – ½ tsp
Stir Fry: 02:56
Oil – 1/3 cup
Whole Cumin – 1 tsp
Onions (large) – 2
Salt – 1 tsp
Bay Leaves – 2-3
Garlic Cloves (sliced) – 2-3
Fenugreek Powder – ¼ tsp
Garam Masala – ½ tsp
Coriander & Cumin – 1 tsp

Stir Fried Lamb with Brocolli | Sanjeev Kapoor Khazana
Juicy lamb stir-fried with Broccoli florets. This lamb cooked in a savoury soy and oyster sauce combination with garlic and chillies makes it a delicious flavorsome dish.
STIR FRIED LAMB WITH BROCOLLI
Ingredients
450 grams boneless lamb, cut into cubes
7-9 broccoli florets, blanched
2 tablespoons oil
Salt to taste
2-3 dried red chillies
4-5X1 inch celery sticks
1 tablespoon chopped garlic
1 tablespoon sweet chilli sauce
1 tablespoon oyster sauce
1 tablespoon soy sauce
1 teaspoon sugar
2-3 spring onion greens, finely chopped + for garnishing
Method
1. Heat 1 tablespoon oil in a non-stick wok. Add lamb and salt, toss to mix and cook till done. Transfer onto a plate.
2. Heat remaining oil in the same pan.
3. Roughly chop dried red chillies and diagonally chop celery sticks.
4. Add chopped dried red chillies to hot oil and sauté till fragrant.
5. Add garlic and sauté till golden. Add chopped celery and sauté for a minute.
6. Add cooked lamb and toss to mix. Add chilli sauce, oyster sauce and soy sauce and toss to mix.
7. Add sugar and mix well. Add broccoli florets and toss to mix. Add spring onion greens, switch off heat and toss to mix well.
8. Serve hot garnished with chopped spring onion greens.
Preparation Time: 8-10 minutes
Cooking Time: 12-15 minutes
