Veal scallops with lemon sauce - italian recipe
Hello everybody from Sonia and welcome to Cucinaconnoi. Today I will propose you a simple and very popular dish: the veal scallops with lemon sauce. The ingredients we need for 4 portions are: 8 veal slices (preferably from first class meat cuts), the juice of a lemon, half glass of broth, 2 spoonfuls of flour, 40 grams of clarified butter, 2 spoonfuls of minced parsley, salt and pepper. Let's start cutting the scallops in order to make them oval-shaped, then we slightly tenderize them. Every meat slice must weigh between 60 and 70 grams. We add salt and pepper on both sides, then we slightly cover them in flour, also on both sides. Now we warm up some butter in a pan and we dip the first scallops, letting them cook on both sides for a couple of minutes. Once they're cooked, we go on cooking the remaining scallops this way. Once all the meat is cooked, we prepare the sauce. If the cooking grease is too much, we remove a part of it, then we add the lemon juice./ We bring the mixture to a boil, adding some broth, we let it warm up and then we place again the meat in the pan. /We let it cook a few minutes, till the sauce has got consistency; if necessary, we add some salt. Now the course is ready to be served. After placing the scallops on a serving dish and we pour the hot sauce over it, filtering it with a chinese strainer. / We finish spreading the meat with some minced parsley or with lemon slices previously dipped in parsley. Simply replace the flour with one suitable for Coeliac, such as Rice or Cornflour.
(Potato starch is not suitable for this recipe).
If you would like to prepare the meat scallops without flouring the meat, prepare the scallops according to this recipe
Note that, the flour that characterizes the scallops will be lost and the flavor will change.
What meat should you choose?
The Veal scallops are usually cooked with a tender piece of veal, such as fesa or girello beef, it can also be made with chicken breast or pork loin, a good idea is to try them all.
The Veal scallops can be kept in the fridge for a couple of days if they are closed in a container or covered with plastic wrap.
When ready to cook, place the meat in a non-stick pan or in a pan to be heated in the oven for just a few minutes
so the meat doesn't dry out.

Scaloppini Al Limone Easy Video Recipe cheekyricho
Easy Video Cooking Demonstration and Recipe for Italian Classic Dish Scaloppini Al Limone. This is quick, light, economical and very tasty. Do give it a try.
INGREDIENTS:
250 grams of veal schnitzels that have been lightly pounded.
25 grams butter
15 grams olive oil
chopped italian parsley
the fine grated lemon rind and juice from one lemon
30 grams flour
salt and cracked pepper
about 100 grams of water, or enough to make a creamy sauce.
METHOD:
Dredge the veal in flour in a bag with a pinch of salt and pepper.
Fry over a medium heat in a pan with the oil and butter until lightly browned on both sides. A couple of minutes should it. Don't over cook. Remove from pan to rest. To the pan add pepper, salt, lemon rind and lemon juice in and scrape to deglaze, add enough water to make a light creamy sauce. Return meat to pan and turn over to coat in sauce, serve with salad, Add Parsley and more water if required to the pan to thin the sauce and Spoon remaining sauce over meat. Serve immediately.
