2 c All-Purpose Flour
1 c Old-Fashioned Rolled Oats
1/2 c Sugar
2 1/2 ts Baking Powder
1/2 ts Baking Soda
1 ts Salt
1 lg Egg
3 tb Vegetable Oil
1/2 ts Vanilla Extract
1 c Coca-Cola
1 c Prunes *
1/2 c Chopped Walnuts
Prune Halves (Optional) * Prunes should be very well drained and coarsely chopped. You may substitute 1/2 cup of dried prunes.

Warm milk:1 cup/240 ml
Warm water:1/4 cup/62 ml
Honey:1/4 cup

My first attempt at making Scottish oat cakes, mainly as i was craving them, they turned out a little over cooked but very nice.

Well this is one of those surprising something-out-of-nothing recipes that actually passed muster. Aside from it falling a bit due to my frigid house, it was delightfully moist and not so dense you could injure yourself if you dropped it on your foot.
I am pleased to say that I am keeping this one around - and plan on tweaking it a bit - heck with oil prices the way they are, I am FINE to not have to use any fats in this bread.
Although after I made this a lovely viewer told me that when they do oat bread, they double the yeast, soooo... next time I try this I am going to see how that works out. Its a great flavor and I would recommend it!

✨Ingredients✨
5 cups (450 g) rolled oats OR 3+2/3 cups oat flour
1+3/4 cups (150 g) quick oats
2 tsp baking powder
1 tsp baking soda
1 ½ tsp salt
1 Tbsp sugar
2 cups (500 g) plain yogurt 1,5 %
1 Egg (medium size)
????????Instructions:
????Preheat oven to 390 F (200 C). Line a bread pan (8x4 or 9x5 inches) with parchment paper, or lightly grease with cooking spray. Set aside.
✅Grind rolled oats in a blender or food processor until they reach a flour-like consistency.
✅Mix dry ingredients. Add in oat flour, quick oats, baking soda, baking powder, salt and sugar in a mixing bowl. Add the yoghurt and egg and mix everything with a spatula. Then knead with a hands to make a smooth dough.
✅Form the dough into a round loaf about 25 cm long, roll the loaf in the rolled oats and seeds. ✅Place into the baking pan and bake about 1 hour, until a toothpick inserted in the center of a cake comes out clean
✅Allow to cool completely.
❗️Measurements Note: All recipes have been developed using weight measurements. Although US volume measurements have been included for your convenience, it is highly encouraged that you weigh your ingredients using a kitchen scale to get the best possible results. Due to the sensitive nature of baking, kitchen scales are proven to yield more accurate and consistent results than measuring cups. Enjoy!
