Baking Scottish Oat Cakes
The Ingredients: 2 cups rolled oats 1/2 tsp baking powder 1/2 tsp salt 1/4 cup unsalted butter - melted 2 Tbl honey (optional, but highly recommended) 1/2 cup hot water (sometimes less)
The Instructions: Preheat oven to 325 degrees.
In a food processor blend the rolled oats until they're a coarse flour. Add the melted butter and honey and process slightly. Slowly add some of the water while blending. Continue until it forms a thick dough. It will probably not take all the water.
Roll out dough on a floured surface to 1/4 inch tall. Cut into simple shapes - we use a 2 1/2 inch diameter circle.
Place on a parchment lined baking sheet and bake 22 minutes, rotating half way through.
Cool a few minutes, then eat warm, or cool completely and store in a sealed container for 1-2 days.
P.S. This recipe works great without gluten or dairy if you make sure your oats are gluten free and use a butter substitute.

Ingredients:
225g oats (1 1/2 cups) 60g wholemeal flour (1/4 cup) 1 teaspoon salt 60g unsalted butter 1/4 cup) 60ml just boiled water Method:
In a large bowl mix together the oats, flour and salt.
Add the butter and rub it into the flour and oats with your finger tips, until it forms a breadcrumb like texture.
Add the water and mix together to form a stiff dough.
Roll out thinly to around 5mm thick and cut into rounds using a cup or pastry cutter.
Cook in a dry pan for around 5 minutes on each side, until lightly browned, or bake for approx 20 minutes at 170 degrees C
Leave to cool fully before eating
