Healthy, Hearty, Homemade Multigrain Bread
Hi everyone,
Today I am making multigrain whole wheat bread, which is rich in fibre and high in antioxidants. This healthy bread is soft and delicious.
Tips: When you are kneading and the dough becomes too sticky, add small amounts of flour as needed, but not too much. If it is not too sticky, you don't need to add flour, just keep kneading until it is smooth and elastic. If you have kneaded for close to 12 minutes and the dough is still a bit sticky, add a small amount of flour.

MULTIGRAIN WHOLE WHEAT BREAD (makes 1 loaf)
Ingredients for multigrain
===================================
¼ cup (45 g) quinoa, washed well
½ cup (120 ml) water
Cook the quinoa in water on medium heat. Stir well and bring to a boil. Cover, lower heat and simmer for about 12 minutes. Uncover and stir well. Remove and let stand for about 20 minutes.
2 tsp sesame seeds
2 tsp flaxseeds
2 tsp sunflower seeds
Combine all seeds in a small container and set aside
Topping ingredients
===================================
1 tsp sesame seeds
1 tsp flaxseeds
1 tsp sunflower seeds
2 tsp rolled oats
Combine all ingredients in a small container and set aside
Yeast mixture ingredients
===================================
2 tsp active dry yeast
1 tsp sugar
¼ cup (60 ml) warm milk
In a bowl, dissolve the yeast and sugar in warm milk.
Let stand in a warm spot until foamy for about 10 minutes
Ingredients for dough
===================================
3 cups (400 g) whole wheat flour
1 ¼ cups (160 g) whole wheat flour
½ tsp salt
3 tbsp brown sugar
1 ¼ cup (300 ml) warm milk
1 large beaten egg at room temperature
¼ cup (60 ml) canola oil
2 tsp fresh lemon juice
Preparation
===================================
⇒ In a large mixing bowl, add 3 cups (400 g) whole wheat flour, salt and brown sugar. Mix well and make a hole in the centre.
⇒ Add cooked quinoa, warm milk, beaten egg, oil, fresh lemon juice and foamy yeast mixture. Gradually add 1 ¼ cups (160 g) whole wheat flour and the seed mixture. Mix vigorously to make a soft workable dough.
⇒ Turn dough out on a lightly floured surface. Knead for about 12 minutes until the dough is smooth and elastic.
⇒ Add small amounts of flour as needed if the dough becomes too sticky. If it is not too sticky, don’t add flour; just keep kneading until it is smooth and elastic. If you have kneaded for close to 12 minutes and the dough is still a bit sticky, add a small amount of flour.
⇒ Form dough into a ball and place in a greased bowl. Oil the top of the dough, cover with a tea towel, put in a warm spot and let it rise for about 1 hour or until it has doubled in size.
⇒ Punch down and form the dough into a loaf (rolling and folding it according to the size of the pan). Place in a greased 5” x 9” (14 cm x 23 cm) loaf pan and flatten. Cover and allow to rise again until the dough is about 1 inch above the pan (about 30 minutes).
⇒ After about 30 minutes, brush all over the top with milk and sprinkle it with topping seeds.
⇒ Bake in oven preheated to 375° F for about 30 minutes. When the bread is fragrant, this is a sign that it is ready. It will sound hollow when you tap on it. Remove from oven.
⇒ Wait a couple minutes before removing the loaf from the pan.
⇒ Let it cool at room temperature on a wire rack before slicing.

Make Bread in 10 Minutes in a Fry pan | No eggs, No yeast
Are you in the mood for freshly baked bread but don't have the time or ingredients for a traditional recipe? Look no further! With this amazing bread recipe, you can whip up a batch of homemade bread in just 10 minutes, and the best part? No yeast or oven required!
Ingredients:
200 grams of all-purpose flour (1 and 2/3 cups) or (7.05 ounces of flour)
5g of baking powder (1 teaspoon) or (0.18 ounces of baking powder)
A pinch of salt
20g of vegetable oil (4 tsp) or ( 0.71 ounces of vegetable oil)
125ml of milk (animal or vegetable milk) 125 ml (1/2 cup) or (4.23 ounces of milk)
- Combine the flour and baking powder in the bowl. Add a pinch of salt for flavor. Pour in the milk and vegetable oil. Mix all the ingredients together until they are well combined and a soft dough is formed. Make sure to incorporate all the dry ingredients with the wet ones.
- If the dough feels too dry, add a little more milk gradually while continuing to mix. If the dough is sticky, sprinkle some flour onto it and knead it until it becomes smooth and flexible. (Just enough to gather the dough does not require kneading).The goal is to achieve a dough that is easy to work with and not too dry or sticky.
- Once the dough is ready, roll it out on a lightly floured surface to a thickness of about 0.5 to 1 cm. You can use a rolling pin to flatten the dough evenly. Then, use a cookie cutter or any round object with a diameter of approximately 6 cm to cut out the dough into individual discs. Repeat this process until all the dough is used and you have obtained the desired number of bread discs.
- Now, it's time to heat a non-stick pan over medium heat.
ـ Once the pan is hot, carefully place a few dough discs onto the pan, ensuring they are evenly spaced apart.Cover the pan with a lid to create a slightly steamy environment, which helps the bread cook evenly and stay moist. Cook each side of the bread for about 5 minutes. You may need to adjust the cooking time slightly based on the thickness of your bread and the heat of your stove. Keep a close eye on the bread to ensure it doesn't burn.
- Once cooked, transfer the bread to a wire rack to cool slightly. The bread should have a lovely golden brown color and a slightly crispy exterior.
- Continue the process of cooking the remaining dough discs until you have cooked all the bread. You can keep the cooked bread warm by covering it with a clean kitchen towel while you cook the rest.
- Once all the bread is cooked, it's time to enjoy your homemade creation. Serve the warm bread with your favorite spreads such as jam, cheese, or use it to make sandwiches. The bread's texture should be soft and tender, making it perfect for any occasion.

Here's how to start making bread without the initial high cost of a new bread maker. In this video, I buy a bread machine for $5.99 plus tax from a thrift shop; clean it up; and make a loaf of Whole Wheat Bread with it (Recipe starts at 09:00 minutes). I'll tell you where to get them and point out some things to look for when shopping for a machine to ensure you get a good one. Filmed with DJI OSMO Pocket 2.
Goodwill and flea markets are a good place to start looking for a machine, but you'll probably have the best luck at Goodwill. I saw machines ranging from $3.99 to $13.99 and most of them looked usable. I missed a couple of things regarding what to look for in the video. Also, make sure all of the feet are on the machine, and give it a good smell test. I think foul environmental odors are a definite reason for looking at a different machine.

- 1¼ cups (300g) lukewarm water + more as needed.

This video demonstrates how to make no-knead multigrain bread in a “poor man’s Dutch oven” (PMDO) and long covered baker (LCB).
Bread making doesn’t get any easier than this… no mixer or bread machine (I’ll make it in a glass bowl with a spoon)… no-kneading (Mother Nature will do the kneading for me)… It doesn’t get any easier than this.
