Jhinga/Prawn Biryani
Serves 4-5
Recipe in English:
Ingredients:
-Cooking oil ½ Cup
-Badi elaichi (Black cardamom) 1
-Hari elaichi (Green cardamom) 2
-Darchini (Cinnamon stick) 1
-Sabut kali mirch (Black peppercorns) ½ tsp
-Badiyan ka phool (Star anise) 1
-Laung (Cloves) 3-4
-Tez paat (Bay leaves) 2
-Zeera (Cumin seeds) ½ tbs
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Hari mirch (Green chilies) crushed 1 tbs
-Tamatar (Tomatoes) peeled & grinded 3 medium
-Paprika powder 1 tbs
-Namak (Salt) ½ tbs or to taste
-Haldee powder (Turmeric powder) 1 tsp
-Dhania powder (Coriander powder) ½ tbs
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Dahi (Yogurt) whisked 1 Cup
-Pyaz (Onion) fried ½ Cup
-Jheenge (Prawns) ½ kg washed
-Garam masala powder 1 tsp
-Chawal (Rice) sella 2 Cups (soaked & boiled until ¾ th done with whole spices & salt)
-Pyaz (Onion) fried handful
-Hara dhania (Fresh coriander) ¼ Cup
-Zarda ka rang (Yellow food color) ½ tsp +Pani (Water) 1 tbs
-Pyaz (Onion) fried handful
Directions:
-In pot,add cooking oil,black cardamom,green cardamom,cinnamon stick,black peppercorns,star anise, cloves,bay leaves,cumin seeds and mix well.
-Add ginger garlic paste and mix well.
-Add green chilies and mix well.
-Add grinded tomatoes and mix well.
-Add paprika powder,salt,turmeric powder,coriander powder and cumin seeds,mix well and cook for 5 minutes.
-Ad yogurt and mix well.
-Add fried onion,mix and cook for 2-3 minutes.
-Add prawns and mix well.
-Cover and cook on low flame for 3-4 minutes then cook until oil separates.
-Add garam masala powder,mix well & set aside.
-In pot,add half quantity of boiled rice,fried onion,prawn gravy masala,fresh coriander,remaining boiled rice,dissolve yellow food color and fried onion.
-Cover and steam cook on low flame for 6-8 minutes & serve!

Directions:
-Pot mein cooking oil,badi elaichi,hari elaichi,darchini,sabut kali mirch,badiyan ka phool,laung,tez paat aur zeera dal ker mix karein.
-Adrak lehsan paste dal ker ache tarhan mix ker lein.
-Hari mirch dal ker mix karein.
-Grinded tamatar shamil karein aur ache tarhan mix ker lein.
-Paprika powder,namak,haldee powder,dhania powder aur zeera dal ker ache tarhan mix karein aur 5 minutes kliya paka lein.
-Dahi dal ker ache tarhan mix ker lein.
-Fried pyaz dal ker mix karein aur 2-3 minutes kliya pakayein.
-Jheenge dal ker ache tarhan mix ker lein.
-Dhak dein aur halki ancch per 3-4 minutes kliya paka lein phir oil alag hunay tak paka lein.
-Garam masala powder dal ker ache tarhan mix ker lein & side per rakh dein.
-Pot mein boiled chawal ki half quantity,fried pyaz,prawn gravy masala,hara dhania,baqi bachay hoye chawal,dissolve zarda ka rang aur fried pyaz dal dein.
-Dhak dein aur halki ancch per 6-8 minutes kliya steam cook ker lein & serve karein.

The Mangalorean Prawn Pulao is unlike any seafood pulao. At its heart is an aromatic coriander-mint masala that complements the sweetness of fresh shrimps, and lends this rice dish an appealing greenish hue and a unique fulsome flavour. One of my favourite food memories growing up, this was a pulao cooked by my Mom on special occasions like birthdays, with plenty of medium-sized prawns, thereby ensuring a taste of the crustacean in every mouthful. And she would also find in this pulao the perfect medium to include finely chopped carrots and beans to feed veggies to her fussy kids. ;-) This pulao recipe is truly special to me, I hope you find it special enough to cook too. Mangalorean Prawn Pulao
Serves 4
Ingredients:
500 gm medium-sized prawns (roughly around 40 to 50 prawns)
2 large onions, finely chopped
2 carrots, finely chopped
10 beans, finely chopped
1 cup peas
8 cloves
5 to 6 green cardamoms
1 inch cinnamon
Oil/ ghee to cook
Salt to taste
For the masala
1 big bunch of coriander and stalk,
1 cup of mint leaves
Ensure coriander and mint are in a 60:40 ratio.
8 to 9 green chillies
1 inch of ginger, peeled and sliced
10 to 12 pods of garlic
1 tsp of turmeric powder
1 tsp salt

Method
1. Wash and soak the basmati rice for 30 minutes.
2. Clean and devine the prawns. Wash them thoroughly using salt and turmeric powder.
3. To the cleaned prawns, add salt, turmeric powder and chilli powder.
4. Mix them well until each prawns is coated with the spice mix. Let it sit until needed.
5. Grind ginger, garlic, shallots, grated coconut, green chillies, red chillies, mint and coriander leaves.
6. Grind them first without water.
7. Now add some water and grind it to fine paste.
8. Grind grated coconut and extract the thick coconut milk. Dilute it with water to have 2 cups of coconut milk.
9. To a pressure cooker, add ghee and oil.
10. To this add, whole spices and onions.
11. Once the onion turns golden brown, add the ground masala paste. Sautè until the raw smell goes.
12. Now add tomatoes and saute them.
13. After few minutes add the spice powders, starting with salt, turmeric powder and coriander powder.
14. Add the marinating prawns to the mixture. Turn the heat to low and mix them.
15. Pour the coconut milk and makes everything.
16. To this add the soaked basmati rice and mixed without breaking the rice.
17. Cover the pressure cooker and cook for 8 minutes on medium low flame.
18. Once the pressure is released open the pressure cooker
19. Aromatic prawn biryani is ready.

Goan Prawn Pulao (Arroz com Camarao de goa), is a delicious prawn and rice dish from Goa. This dish has major Portuguese influences from Goa’s colonial history with Portugal. Use of prawn stock makes this dish unbelievably flavorful.

Ingredients & Quantity
Jumbo Prawns (Shelled, deveined, washed & Cut) - 10 Nos
Vegetable oil - 2 tbsp
Cloves - 6 nos
Black peppercorns - 7 nos
Cardamon - 3 nos
Cinnamon - 1 inch
Bayleaf - 1 no
Onion (chopped) - 2 med
Tomatoes (Deseeded & Chopped) - 2 med
Turmeric powder - 1/4 tsp
Vegetable stock cubes - 2
Basmati Rice or any long grained rice - 1 cup
(250 gms)
Hot Prawn stock - 2 cups
Salt - 1 tbsp
Water as needed
Coriander leaves (Chopped) - handful
Prawn stock
Reserved prawn shells and heads of 10 jumbo prawns
Black peppercorns - 20
garlic - 6 cloves
Ginger - 1 inch
bayleaf - 1
carrot - 1 nos
Onion - 1 Nos
water - 4 cups
Method
1) First begin by cleaning the prawns for that Remove the shells, devein, wash & drain them. Cut the prawns into 2 half depending on the size. apply some salt and set aside for 30 mins. (Reserve the prawn heads and shell)
2) To make the Prawn stock - Take a deep bottom vessel, Add the prawns shells, peppercorns, garlic, ginger, bayleaf, carrot, onion and water. being to a boil and then reduce the head and simmer for 30 mins. scum off the skim as it comes on top without disturbing the stock. finally strain the stock using a strain and muslin cloth.
3)Take a bowl and add long grained rice in it, pour some water and allow to soak for 20 mins.
4) Heat oil in a vessel, add whole spices (Cloves, peppercorns, cardamon, bayleaf) give a quick stir.
5)Add the Onion and saute till light brown in color. then add tomatoes and fry till mashy.
6)Wash and drain the rice 2 times.
7) Add Turmeric powder, vegetable stock cubes and prawns. fry for 2 mins
6)Add the washed and drained rice and fry for a minute.
7) Now add the hot prawn stock double the quantity of rice, some salt to taste, handful of Chopped Coriander leaves, mix well and cover the lid. cook till the rice has almost absorbed the stock.
8) Once the rice has almost absorbed the stock open the lid and give a gentle stir using a spatula. cover the lid again and cook for 2 mins on low heat. (Incase you are cooking on gas use a hot griddle(tawa) under the vessel to prevent the rice from burning).
9) Once the prawn pulao is ready keep it cover until you consume it otherwise the surface of the rice will dry out and it will turn hard.
10) Enjoy this dish with hot chicken vindaloo or Sorpotel.
