All-Purpose Flour, 100% – 600g (4 1/2 Cups)
Warm Water, 75% – 450g (2 Cups)
Coarse Sea Salt, 1% – 6g (3/4 tsp.)
Extra Virgin Olive Oil, 3.3% – 20g (2 tbsp.)

Rustic Sicilian bread Scaccia with spinach and feta cheese
I am bringing you the recipe for this rustic Italian bread Scaccia, typical for Sicily.
This time I made it with spinach and feta cheese and it’s so delicious! Essentially, it’s a thin pizza rolled into a loaf ???? At least it is how I interpreted it, I may be wrong on this one.
Traditionally, Scaccia is made with ricotta cheese filling, but there are so many other varieties of this bread.
If you have your foolproof pizza dough recipe, by all means, use that one.
Dough:
1 cup warm water,
3 1/2 to 4 cups of flour,
5g yeast,
1 1/2 tsp salt,
50 ml vegetable oil.
Mix water and yeast and let it sit for until you see yeast coming to surface. Add rest of the ingredients and mix until it forms a smooth dough. Let it sit for an hour. Once you see it doubled in size, roll it out into a square line shape and at least half a centimeter thickness. You can go even thinner than that.
For filling I used spinach and feta cheese, spread evenly over the dough.
Now, for folding, first fold the sides, about 5 cm and then from the front, starting from yourself.
Bake it for 40 minutes at 200 C or 400 F.

For the sauce, chop up four or five cloves of garlic and grate a roughly equivalent pile of parmesan or pecorino cheese. Fry the garlic in a little butter until it's just golden, then pour in about half a cup of heavy cream. Bring to a boil, then remove from the heat. When it's mostly stopped bubbling, grind in some pepper melt in the cheese. If the sauce has gotten thick and gloppy by the time you need to use it, thin it out by adding more fresh cream.
