My Version of DiCamillo's Italian Bread
My siblings asked me to show how I make bread... so here you go.
This recipe makes two medium size loaves.
500g bread flour
325g warm water (65% of the flour mass)
7g instant yeast (1.4%)
10g salt (2%)
15g olive oil (3%)
10 minute knead
3 minute rest
75 minute bowl proof
15 minute rest
Form the loaves, 60 minute bench proof
40 minutes at 400F
I used bromated and bleached flour in the video, but (unbromated) King Arthur bread flour works well too.

INGREDIENTS:
450g Vincenzo's Plate Bread Dough (Click here for the recipe)
8 large black olives (pitted and cut into 4 pieces)
1 small cup of plain flour
Extra virgin olive oil
Balsamic Vinegar
UTENSILS:
1 x rolling pin
1 x knife (with a point)
Wooden board/Kitchen Bench
1 x pizza tray (better if it has holes at the bottom so it cooks through)
Baking paper
METHOD:
1. Make sure the dough has been out of the fridge for 15 minutes.
2. Throw some flour on the wooden board/bench and spread it using the palm of your hand and place the dough on top.
3. Spread the dough with the rolling pin making sure it is not too flat or too thin.
4. Place half of the olives on top, pressing them into the dough at least 4cm apart from one another.
5. Now, roll the dough with your hands and try to cover all of the olives with the dough.
6. Preheat the oven to 250 degrees.
7. Add the rest of the olives by pressing them into the dough and covering them once again.
8. Use the rolling pin to gently press the olives further into the dough. It's OK if you can still see a couple of the olives at the top.
9. Line the pizza tray with baking paper and place the ball of dough on top.
10. Now, with a sharp knife, make a slit on the right hand side of the ball of dough. It should open slightly but make sure you don't cut all the way down!
11. Place the tray in the oven for at least one hour.
12. Once it has browned on top and cooked through, leave the bread to rest for between 15-20 minutes.
HOW TO SERVE:
Once the bread has rested, pour a generous amount of extra virgin olive oil and at least two tablespoons of balsamic vinegar into a small bowl or glass.
Pieces of the bread can then be dipped into this mix or you can serve the bread with this drizzled over the top.

Simit is a delicious sesame crusted bread that you can have for breakfast and street food staple in Istanbul and much of Turkey.
What is simit
Simit is a sesame crusted, circular bread from Turkey.This crusty bread or Turkish bagel,is probably the most common bread in Turkey. It’s dunked in molasses and encrusted with sesame seeds.
Simit is also known as Gevrek,Bokeh or Koulori.The size of the bread, it’s crunch, chewiness and other characteristics vary slightly by region.
How Does a Simit Taste Like
Though simit is an yeast bread ,the smell, flavor and taste is so unique.
Crunchy and chewy, satisfyingly savory with a touch of malty sweetness, nutty from the sesame seeds dotting the ring of bread; these are the tastes of a simit, the ultimate Turkish street snack.
The street food version is typically fairly thin and compact, much like a twirled bagel. In bakeries, they’re usually fluffier and more similar to a white loaf in texture.
How to make Turkish Bagel ;Simit
In this Simit Recipe, we are making Turkish Simit Bread like the one that we get from the streets of Istambul.
These Simit breads are crispy on the out side with softer inside.
1.Prepare the Turkish simit bread dough
2.Divide the simit bread dough into 4 equal parts
3.Rest the simit bread dough for 10 minutes
4.Pre shape the dough
5.Coat the shaped simit with molasses and sesame seeds
6.Final proofing for 30 minutes
7.Final Shaping of simit into sesame rings
8.Bake the simit
Bake the simit bread in a 450 F or 230C preheated oven for 10 minutes and then reduce the temperature to 400 F or 200 C and Bake for another 8-10 minutes.

After Baking we will get beautiful sesame ring breads or simit rings which are golden brown in color.
They are crispy on the out side and soft inside.

Sicilian semolina Bread
Mafalda The Semolina bread of Sicily

350g Semolina Rimacinata
150g K.A. A.P. Flour 100% 500g
10g Salt 2.00%
7g Instant Dry Yeast 1.40%
1 tsp. Barley Malt Syrup 1.40%
330g Water 66.00%
1 Tbs. Olive Oil 2.20%
3 Tbs. Sesame Seed
1tsp. Anise Seed
Simple straight dough method.
1. Mix all ingredients except the olive oil until the dough ball clears the sides of the Bosch mixer.
2. Slowly add the oil drizzling it down the side of the mixer bowl
3. Move to a lightly oiled bowl.
4. allow to rise at room temperature covered until doubled in volume. About 1hr
5. Scale into two equal weight balls. Rest for ten min. Covered
6. Pre-shape each ball into a 30” long rope. Rest for 15 min. covered
7. shape into the serpent or the eyes of Saint Lucy shapes.
8. Proof covered at room temperature until the loaves are double in volume. (about 1hr.)
9. Pre-heat the oven to 500F and prep the steaming apparatus
10. Bake for 1o min. at 500F with full steam
11. Remove the steaming apparatus and purge the oven
12. Lower the heat to 425F
13. Bake for an additional 10-15 min. until golden brown
