Dairy Free Silken Tofu Chocolate Pudding
I bet you didn't know that Silken Tofu - the tofu in a box - is an amazing base for all sorts of desserts, including my Creamy Chocolate Pudding. I've been eating it and using it for over thirty years. Even if your goal is not to go plant-based - it never hurts to lighten up dessert. Can you eat dessert and feel good about it? Well, now you can!
1 12 oz. box of Mori-Nu Silken Tofu (Soft)
1/2 medium avocado
1/3 cup cacao powder
1 tablespoon instant coffee (optional)
1/4 cup plus 2 tablespoons maple syrup
1 pinch of salt
1. In a food processor or blender process the tofu and avocado until smooth. I know adding the avocado sounds a little crazy, but I was looking for something healthy that would thicken my pudding slightly, and this is perfect. You won't even taste it. You could also try 1/2 banana.
2. Add the cacao powder and instant coffee. Keep blending until smooth. Instant coffee enhances the chocolate flavor. Leave it out if you prefer. You can also use an equal amount of melted chocolate - block or chips. Just place it in the microwave for thirty seconds, stir, and then repeat until smooth.
3. As the food processor is still blending, add the maple syrup and salt. Keep processing until it all pulls together. You can stop and push the product down from the sides and process it again.
4. Pour the mixture into ramekins. Store in the fridge for at least 30 minutes. I prefer at least 2 hours to overnight - I think they tend to set much better. Top these beauties with your favorite toppings. I love using cacao nibs. If making these for the kids, try sprinkles and/or crushed candy cane. These will keep in the fridge for 4 to 5 days.

Pie Pan: 9 inch x 1.125 inch (22.9 x 2.9 cm)
▶️ PIE CRUST:
225 g roasted almonds (1+1/2 Cup approx. - firmly packed)
175g dates (1 cup approx. - firmly packed)
1/4 teaspoon Salt
2 tablespoon melted coconut oil OR vegan melted butter (or regular butter for Non-Vegans)
1 Teaspoon Vanilla extract
▶️ CHOCOLATE MOUSSE FILLING:
300g Soft Tofu
1/4 cup maple syrup OR honey (for Non-Vegans)
1 teaspoon lemon OR lime juice
1 teaspoon vanilla extract
1/8 teaspoon salt
200g semi-sweet chocolate
1/4 cup plant-based milk of choice (I have added almond milk)

Chocolate Silk Keto Pie [The Perfect Indulgent Treat]
This chocolate silk pie seems so extravagant, it’s hard to believe it’s low-carb and keto friendly. A golden flaky crust is filled with creamy rich chocolate filling that melts in your mouth. The combination satisfies any craving for a decadent chocolaty dessert.
