Lentil Sloppy Joe recipe | Vegan
**WATCH IN 1080p HD FOR BEST QUALITY**
Hey guys and gals! Yes! it is time for another incredible vegan recipe and so today I am sharing with you all my recipe/version of the infamous lentil sloppy joe. Growing up I never experienced eating sloppy joes due to the fact that my mom never cooked red meat at home, but I ALWAYS remember watching that famous sloppy joe scene on the movie 'it takes two' with the Olsen twins and thinking it looked so gross but also wishing that I could eat one myself. So fast forward years later I'm now a vegan and well I wanted a sloppy joe and I freaking got myself a dang sloppy joe and an incredibly delicious and healthier one at that!! I hope yall give it a try and LOVE it!!
Ingredients **makes 4 servings
2 Tbsp veg oil
1/2 a white or yellow onion (diced)
1/2 a green bell pepper (diced)
1 red chili pepper (deseeded and diced) or 1/2 tsp chili powder
2 Cloves of garlic (minced)
1 tsp cumin
1/2 tsp smoked paprika
S+P to taste
1 C brown lentils (rinsed and drained)
1 C water
1 C vegetable stock
1 C tomato sauce
2 Tbsp sugar
2 Tbsp vegan-friendly Worcestershire sauce or 1Tbsp ACV+ 1 tsp yellow mustard
1-2 Tbsp ketchup

***OUR MOST ASKED QUESTION ANSWERED***
Q: Does Steven ever not like anything? ????
A: Of course!! First of all, we have been married for 19 years and I was not always good in the kitchen. In fact, I was a pretty terrible cook for the first 12 years or so. So there were plenty of times when neither of us liked what I made. But I've gotten better at picking out meals that I'm pretty sure we will enjoy. I don't just go pick a recipe and cook it. I read through it and research different variations before I deem it a good one to try.
Secondly, if we were to not like something I would NOT show it here. Solely because I want to share only recipes that we would recommend. I don't want to waste your time, or my time (editing) on a recipe we would never tell anyone else to try. We've only had that happen once - and I got rid of the footage we had filmed (which was so sad because we took time to film it).
I hope that answers that question! Remember also that we only film 3 meals a week. The rest of the time we have our family favs or go out to dinner.

Classic Sloppy Joe sandwiches
Thanks to ButcherBox for sponsoring this video! Get free ground beef with every box for a year, plus $35 off your first two boxes with this limited-time offer:
***RECIPE***
ground beef (a pound / 454g will make at least four big sandwiches)
fresh pepper (I like a jalapeno but most people use a bell pepper)
onion (not much, so I just use a shallot for a pound of beef)
carrot (if you want)
ketchup (a lot)
mustard
Worcestershire sauce
brown sugar or molasses
oil, salt, pepper, spices, etc (I like celery seed, garlic powder and onion powder)
burger buns
Chop up the onion, pepper and carrot (I like to cut the carrot into really big chunks, but they take a little while longer to cook). Get the vegetables frying in a little oil in a wide pan. When they seem halfway soft, push them over to one side of the pan and shift the pan a little off the burner so the vegetables don't get too hot.
Turn the heat up and drop in the ground beef, smashing it into the surface of the pan so that it's like a giant burger. Let it sit and brown on the bottom. When you scrape and you see golden brown, stir up the beef with the vegetables — a lot of water will come out of the meat and you can use it to deglaze the pan. Keep stirring and cooking until there's no pink beef left (I'm careful to not break up the meat chunks too much at this stage).
If you're using celery seeds or other whole spices, now would be a good time to throw them in so they can fry a little in the beef fat.
Squeeze in a ton of ketchup, a little mustard, a little Worcestershire, a little sugar/molasses, and your remaining seasonings. Stir and taste. Adjust any of the quantities and maybe loosen it up with some water so that you have a thick, saucy consistency. When in doubt, add more ketchup.
Lightly toast the buns before serving, to make the sandwiches less sloppy.
