White Cut Chicken, Bak Chit Gai - from scratch, nose to tail (白切鸡)
So we wanted to teach you how to make Chinese poached chicken - the traditional 'white cut chicken', i.e. Cantonese Bak Chit Gai.
It's a real common festival dish, so this week we got Steph's Dad Dawei to come and be our guest cook. He's an incredible cook, and he showed us how to kill, break down, and eat the whole chicken nose to tail.

1. 당근을 사방 2cm 길이로 자른다. 2. 냄비에 물, 자른 당근을 넣고 물이 끓어오르면 5분 정도 삶아 식힌다. 3. 삶은 당근과 당근을 삶은 물과 함께 믹서에 갈아준다. 4. 당근이 곱게 갈아지면 냄비에 부어 중약불에서 저어가며 끓여준다. 5. 습식 쌀가루와 물을 섞어둔다. 6. 농도가 잡히기 시작하면 만들어 둔 쌀가루물을 넣어 농도를 맞춘다. 7. 농도가 맞춰지면 꽃소금으로 간한다. 8. 완성 그릇에 당근 죽을 담고 통단팥을 올려 마무리한다.
Carrot and red bean porridge
[Ingredients]
Carrot 400g Water 1.2L Wet rice flour 2/3 cup (70g) Water (rice flour) 1/3 cup (70g) Fine salt Whole sweet red bean
[Directions]
1. Cut the carrot into 2-cm pieces. 2. Add water and cut carrot to a pot and boil for 5 minutes. 3. Grind the cooked carrot and the water together in a blender. 4. Pour the ground carrot mixture into a pot and cook over medium heat while stirring. 5. Mix the wet rice flour and water. 6. Once it gains consistency, add the rice flour mixture to thicken. 7. When it thickens enough, season with salt to taste. 8. Put the porridge in a bowl and top with sweet red beans to finish.
