How To make Snowball Cake
Ingredients

unflavored gelatin
4
tablespoon
cold water
1
cup
boiling water
1
cup
orange juice
3
tablespoon
lemon juice
1
cup
granulated sugar
1
each
large angel food cake
3
cup
whipping cream
4
oz
coconut shredded, or flaked
Directions:
Soften gelatin in cold water. Add boiling water, stir to dissolve completely. Add orange juice, lemon juice and sugar. Stir until sugar is dissolved. Refrigerate until thick as eggwhite.
Whip one pint (2 cups) whipping cream, using chilled bowl and beaters. Fold into thickened gelatin mixture. Coat sides of 3 qt. bowl or 10" tube pan with vegetable shortening and line with waxed paper.
Break angel food cake into 1 inch pieces. Alternate layers with gelatin/whipping cream mixture. Chill overnight or 6 to 8 hours.
Invert onto cake plate and frost with 1/2 pint (1 cup) cream whipped. Cover generously with coconut. Refrigerate until serving time. Refrigerate any leftovers promptly. Serves 12-16.

How to make Red Cakes | Snowballs | South African Treat
This week I made Red Cakes, this delicious cake is a South African treat we grew up eating. Dipped in sweet jam and covered in coconut. You cannot go wrong with this treat for any afternoon tea.

snowball cake slices/snowball logs/Vanilla Cake Slices
Ingredients
250g butter
1+1/2 cups sugar
4 Eggs
3 cups Cake flour/ plain flour
4 teaspoons baking powder
pinch of salt
1 cup milk
2 teaspoons vanilla essence
bake at 170 degrees
25-30 minutes
cut into any shapes you want
dip into jam and roll into coconut
250g jam dissolved into 100ml hot water on stove top until smooth.
Allow to cool
decorate as desired
I used whipping cream and topped with fresh blackberries and raspberries
