How to Make The Best Snowball Cookies - Easy Recipe
Mexican wedding cookies, Russian tea cakes, Butterballs, Polvorones, Nutballs...and known as a dozen other names, these snowball cookies are buttery and delicious!

Ingredients:
2 c unbleached flour
¼ ts fine salt
½ ts cinnamon {optional}
½ c toasted, chopped nuts {walnuts, pecans, hazelnuts, almonds, etc}
⅓ c sifted powdered sugar
1 stick soft, unsalted butter
1 ts vanilla {or nut} extract
2 c powdered sugar {for rolling}
Instructions:
In the first {dry} bowl, mix the flour, salt, cinnamon {if using} and nuts together.
In the second {wet} bowl, cream together the butter and sugar. Add the extract.
Combine the first and second bowls together in thirds, taking care not to over mix.
Scoop out and bake at 350 {for my miniature scoops, it took 13-17 minutes}
Once they've cooled a bit, roll in the powdered sugar.
Let them cool completely and roll in powdered sugar once again.

How to Make Snowball Cookies
These chocolate chip snowball cookies are made with no eggs and just 6 ingredients!

Simple but sweet and utterly addictive, these buttery cookies melt in your mouth! Be sure to coat yours with a generous dusting of powdered sugar while they're still warm for that classic snowball look.

Ingredients
1 1/2 cups unsalted butter softened (340g)
¾ cup powdered sugar 105g
1 Tablespoon vanilla extract
3/4 teaspoon salt
3 cups all-purpose (plain) flour (375g)
2 cups mini chocolate chips
Additional powdered sugar for dusting
Instructions

00:24 Preheat oven to 375F (190C) and line a cookie sheet with parchment paper*.
Place butter in the bowl of a stand mixer (or you can use a large bowl and an electric mixer) and beat until creamy.
01:08 Add powdered sugar, vanilla extract, and salt, and beat again (start on low speed and then increase to high) until the mixture is creamy and well-combined.
01:34 Gradually add all-purpose flour until ingredients are well incorporated (be sure to scrape down the sides and bottom of the bowl!).
Add mini chocolate chips and use a spatula or your mixer on low speed to stir them into your cookie dough (dough will be stiff).
02:39 Scoop cookie dough by approximately 1 Tablespoon and roll between your hands to form a smooth ball. Transfer to prepared baking sheet and place cookie dough balls at least 1 apart.
Bake on 375F (190C) for 10-12 minutes or until bottom edges are just beginning to turn light golden brown.
03:16 Remove from oven and sprinkle/sift powdered sugar overtop cookies while they are still warm.
Allow to cool and enjoy!

Double Chocolate Snowball Cookies (Russian Tea Cakes/Wedding Cookies)
There are so many things to love about these chocolate snowball treats – these classic Christmas chocolate cookies are perfect for the holidays (or any time of year). You can freeze them, take them to parties, gift them. Or eat them all, I won’t judge. Just make a batch – you won’t regret it!

INGREDIENTS
1 cup unsalted butter softened
½ cup powdered sugar
¼ cup unsweetened cocoa powder I used Special Dark, use your favorite
1 teaspoon vanilla
2 cups all-purpose flour measured correctly (spoon and level, do not pack)
½ teaspoon salt
¾ cup mini chocolate chips or chopped nuts
Additional powdered sugar for rolling (about 1 – 1 ½ cups)
INSTRUCTIONS
Preaheat oven to 350°. Line two cookie sheets with parchment paper.
Mix butter, ½ cup powdered sugar, cocoa, and vanilla with an electric mixer until fluffy. Add flour and salt and mix until the dough comes together. Stir in the chocolate chips. If dough is too soft, chill it until you can work it easily with your hands.
Scoop 1 tablespoon balls of dough and place on prepared cookie sheet.
Bake cookies for 7-10 minutes until bottoms are just slightly brown and the tops are no longer glossy. Remove from oven and cool for 5-10 minutes, until you can handle them. Fill a small bowl with 1 cup powdered sugar and roll each cookie in the sugar until coated. Place on a rack to cool. (Once cookies are cooled, you may want to re-roll them in more powdered sugar.)

Classic Snowball Cookies
Snowball cookies are a classic holiday dessert made with simple ingredients, are buttery, nutty, and just melt in your mouth. The holiday cookie you'll want all year round!
A butter cookie is something so special because it’s truly a cookie made of butter, flour and sugar. The taste is so melt in your mouth delicious. It just cracks and completely melts away like snow.
Ingredients:
* 1 cup (8oz/225g) butter, at room temperature
* 1/3 cup (2 1/2oz/71g) sugar
* 2 teaspoons vanilla extract
* ¼ teaspoon salt
* 2 cups (10oz/284g) all-purpose flour
* 2 cups (8oz/225g) finely ground walnuts or toasted pecans*
* 1½ cups (6oz/172g) powdered sugar
Instructions:
* Using a large whisk or electric mixer, cream together butter, sugar, vanilla, and salt.
* Gradually add flour in two batches using a spatula. Stir in the nuts until fully incorporated.
* Cover and refrigerate the dough for approximately 45 minutes (dough can be stored in the fridge for up to 5 days or frozen for up to 6 weeks).
* Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
* Place powdered sugar in a small bowl and set aside.
* After chilling, use a 1 tablespoon measure to scoop cookies. Roll between your palms to achieve rounded balls, placing them 2 inches apart on the prepared baking sheets without flattening.
* Bake for 14-15 minutes; avoid overbaking. The cookies' undersides should be lightly browned, while the tops remain pale.
* Cool cookies on the baking sheet for about 5 minutes. While still warm, gently roll them in the powdered sugar.
* Place sugar-coated cookies on wire racks to cool completely. Once cooled, roll cookies in powdered sugar for a second time.
* Store in an airtight container at room temperature for up to 5 days.
