Sopa de Frijoles! How to Make a Delicious Bean Soup!
This is a quick recipe video of a simple bean soup. It's real easy to make. Just saute a bit of bacon bits in a bit of cooking oil in a stainless steel pan, and lightly mash with the back of a wooden spoon. Add some the slow cooked beans with it's liquid, and your favorite Mexican seasonings. Serve with you favorite warm tortilla. Yum!! Enjoy!

Sopa de Frijoles Negros
Los frijoles Negros; con un alto contenido en proteina y bajo contenido de grasa, y una receta totalmente vegana, saludable y facil de preparar nos lleva a la mesa uno de los mejores alimentos que podemos encontrar.
BLACK BEAN SOUP
INGREDIENTS SERVES 4
3 ½ Cups of soaked black beans
3 Garlics cloves
6 Cups of water + 1 cup of vegetables broth
3 Plum tomatoes
1 White onion
1 Escabeche chipotle chili
2 Tbs Cilantro
1 Tbs Jalapeno cut into small dices
4 Tbs Queso fresco cut into small dices
2 Tbs Sour Cream
500 ml Blend oil
Salt as prefered
DIRECCTIONS
1- Soak the beans the night before. In a pot over medium heat place the beans with 6 cups of clear water and 3 garlics cloves and cook until soft
2- In a pan over medium heat, place the tomatoes and roasted until can remove the skin easily, add in the same pan ¼ of onion and cook until roasted.
3- When the beans are soft take 1 cup to the blend with 2 cups the cooking liquid, + 1 cup of vegetables broth, the roasted tomatoes, roasted onion, chipotle chili, and blend until obtain smooth mix. And come back with the rest of beans. Add salt
4- In a pot over medium heat add the 500 ml blend oil wait for a minute and place ½ white onion cut into small dice and cook until caramelized, when is ready add to the beans and cook until have the right texture.
5- For the sides, made a Pico de Gallo with cilantro, onion, tomatoes, and jalapeno chili add salt mix.
6- To serve. In nice plate add the soup y garnish with some Pico de Gallo, queso fresco and sour cream. ENJOY
