How To make Sour Butter Beans
1 lg Onion, choped fine
2 Cloves Garlic, crushed
1 Green Chilli (optional)
1 lg Head Broccoli
1 md Courgette/Zucchini, sliced
1 lb Chopped Skinned Tomatoes
1 t Mixed Herbs
1/2 t Marjoram
1/2 t Basil
1 cn Butter Beans (the big ones,
Also called Lima beans?) 1/4 c Rich vegetable stock
1/4 c Soya Milk
250 ml Soya Yoghurt
1 ds Lemon juice
1/2 t Salt
1/2 t Pepper
1/4 c Corn
1 T Tomato Puree
Fry the onion, garlic and chilli in a little water or olive oil. Add the base and stalks of the broccoli (i.e. everything except the flowerets), and the courgettes. When all this has softened sufficiently add the tomatoes and the herbs. Leave to simmer (covered) for fifteen minutes. While that is underway combine the beans, stock, soya milk, yoghurt, lemon juice, salt and pepper in a liquidiser until a smooth mixture is obtained. After the fifteen minutes are up add the bean mixture and simmer uncovered for a further five minutes. Add the corn and then enough tomato puree to take away the anaemic look. Ingredients:
Sour herbs ( Sorrel herbs ) 1 - 2 bunches ( your preference )
Pea Dhal 1.5 cups to 2 cups ( 325g to 500grams )
0.5tsp of Turmeric
Garlic cloves ( optional )
Salt
Boiling water
Add some Tamarind water to make it more sour ( optional )
Oil
1 Levelled tsp of Mustard seeds
Less than 0.5tsp of Cumin / Jeera seeds
2 Dried Red chillies
2 Green chillies
1 Sliced Onion
Fresh Curry leaves
Half a tsp of crushed Ginger and garlic or more crushed garlic
Less than a 0.25tsp of Turmeric
1 levelled tsp of Kashmiri chilli powder
1 Small diced Tomato
A sprinkle of salt
Less than 0.25tsp of Sugar

Slovak Sour Bean Soup
Slovak sour bean soup - this recipe is just for your inspiration, be free and brave to improvise:
2-3 tbl spoon of pork fat (or oil)
+ leftover pork skin from smoked bacon
1 bigger onion
2 homemade smoked sausages
2-4 tea spoon of sweet red paprika
1 tea spoon of black pepper
5-7 middle size potatoes
3 pcs of bay leaf
1-3 pcs of garlic
1.5L of pork bouillon from pig slaughter (can use usual beef stock or use just a water)
+ leftover of another meat sauce from previous meal
2 cans of beans (red ones or white or big buttery ones, or mix of it)
1-3 tea spoon of self-made spice mix (it's grillish-like)
20-30g of butter
500g of whipping cream
200g of sour cream
+ leftover of garlic-spicy sour cream dip
3 tbl spoons of white flour mixed with 2-3dcl of milk - to thicken soup
1 tbl spoon of vinegar
+ salt up to your taste... (about 1/2-1 tea spoon)
... you can put even a smoked pork trotters, etc... just enjoy the time of smell and taste, time of cooking, time of relax...

I love to make New Orleans style red beans and rice in the pressure cooker. It saves time and makes it so that I don't have to soak the beans over night. To me not having to plan ahead is a win! We will also make homemade sour cream cornbread!
Red Beans:
1 lb dried kidney beans
1 onion
2 stalks celery
1 red bell pepper
4 slices bacon
13oz cajun sausage
1 ham hock
4 1/2 cups water
1/2 tbsp chicken bouillon
1 tsp creole seaosoning
1/2 tbsp smoke papriked, onion powder, garlic powder
1 tsp white pepper. dried thyme
1/2 tsp dried basil
salt to taste
Cornbread:
1 cup cornmea
1 cup flour
1 tbsp baking powder
1/2 tsp salt
1 stick melted salted butter
1/4 cup sugar
2 tbsp honey
1 can creamed corn
1 tbsp bacon grease or shortneing for the cast iron skillet
1 tbso milk
1 cup sour cream
