Don't Be Confused About This Simple Quick Bread
We're back at George Washington's Mount Vernon! Once again, we're joined by Deb Colburn and today she has a recipe for Hoe Cakes. A delicious and easy Cornmeal Pancake that you have to try!
Cornbread is something that I associate with home. I remember making it as a kid from the Jiffy mix boxes. Making this recipe takes a little bit more effort, not much mind you, but the results are absolutely worth it.
Mix together everything except the baking soda. Butter the baking dish that you want to use (good sizes are 8x8 inch square or a 10 inch round). Mix the baking soda in quickly and immediately pour the batter into the baking dish.
Cook for 15-20 minutes or until golden brown and slightly pulling away from the edges.

Sourdough Skillet Cornbread | Bluebonnet Bend Homestead
This is the best recipe I have followed for cornbread. The use of sourdough discard creates a wonderful texture and a unique flavor. The recipe that I use for the cornbread mix is one that I found on Pinterest several years ago and I do not know where it originated.
Cornbread Mix: 1 1/2 c flour 1 1/2 c corn meal 1/2 c sugar 2 Tbsp baking powder 1/2 tsp baking soda 1/2 tsp salt
Sourdough Cornbread: 1 1/2 c cornbread mix 2 eggs 1/2 c melted or softened butter 1 c sourdough starter discard (in my video I added a splash of milk because I was short a full cup of discard)
Bake at 375*F for 25-30 min in either a cast iron skillet (best) or a 9x9 pan.
This recipe can be replicated without the use of sourdough starter by adding an additional cup of the cornbread mix and 1 cup of buttermilk (best), heavy cream or milk.

A delicious and comforting sourdough cornbread recipe that’s pretty quick and easy to whip up. We baked ours in cast iron but a baking pan will work well too. Just make sure you grease it really well with lots of butter and you’ll be good to go.
This classic hits the spot and goes great with any BBQ food you can think of. And hands down our favorite combo is pork back ribs and sourdough cornbread. Not sure what’s better with this cornbread, butter or BBQ sauce? But hey why not use both!

Equipment CAST IRON PAN
Ingredients 1 cup Sourdough starter (active) 1 cup Buttermilk 1 cup Cornmeal 1 cup All-purpose flour ½ cup Sugar 2 eggs ½ cup Butter (melted) 1 tsp Salt 2 tsp Baking powder ½ tsp Baking soda
Instructions 1). Preheat over to 350℉ 2). Make batter by adding starter, milk, cornmeal, flour and sugar to large bowl and mix well 3). Cover and Let sit 1 hour 4). In small bowl whisk egg, melted butter and salt, and add to batter. Add baking powder and baking soda and mix well. 5). Add batter to greased 10 cast iron (or baking) pan 6). Bake 30-35 minutes or until golden brown and remove from oven 7). Check to see if it's done by inserting a toothpick to the center of the cornbread and ensuring it comes out clean 8). Let cool slightly and slice it up!
