This Southwest Chicken and Rice Casserole is makes the perfect healthy and delicious dinner. It's simple and baked in a casserole dish which means fewer dishes and less clean-up.
Southwest Chicken and Rice Casserole
Ingredients
4 to 6 boneless skinless chicken thighs, breasts, or tenderloins
1 cup white rice
1 cup chicken broth
1/2 cup chopped onion
3 garlic cloves, minced
1 cup black beans
1 cup corn
16 oz. jar of salsa
1 cup shredded Mexican blend cheese
1/2 tsp smoked paprika
1/2 tsp cumin
Instructions
In a 9x13 baking dish, add rice, garlic, onion, and chicken broth and stir together. In a separate bowl combine the rest of the ingredients except cheese. Then add the mixture over the rice, making sure to keep the rice on the bottom. Sprinkle with cheese. Cover and bake in a 350 degree oven for 45 minutes. Then bake uncovered for an additional 10 minutes.

This Southwest chicken salad is packed full of fresh and vibrant ingredients and made with a chili lime dressing. Spiced chicken breasts are coated in a spice mixture and oven baked for a filling and hearty Mexican salad.

INGREDIENTS:
Southwest Chicken:
2 pounds boneless skinless chicken breasts
2 tbsp olive oil
1 tbsp chili powder
2 tsp paprika
1 tsp ground cumin
½ tsp garlic salt
Chili Lime Dressing:
1 cup plain greek yogurt
1 tsp chili spice
½ tsp paprika
½ tsp ground cumin
Dash of garlic salt
Juice of 1 lime
Southwest Chicken Salad:
8 cups lettuce
1 cup multicolored cherry tomatoes
1 cup black beans
1 cup bell peppers sliced
2 ears of corn sliced off the cob
1 large avocado sliced
½ cup queso fresco

Southwest Chicken Bake
This Southwest Chicken Bake is an easy chicken recipe perfect for dinner any night of the week. With just a few ingredients and one dish, you can have the most delicious chicken dinner. This creamy, cheesy baked chicken recipe is covered in enchilada sauce for a Tex-Mex inspired meal the whole family will love!
FULL RECIPE:
INGREDIENTS
4 skinless boneless chicken breasts
kosher salt & black pepper
1 15 ounce can enchilada sauce
1 14.5 ounce can chopped tomatoes with green chilies, drained
8 ounces sour cream
1 cup Mexican blend shredded cheese
GARNISHES:
Fresh cilantro chopped
Cojita cheese crumbled
Tortilla corn strips or corn chips

INSTRUCTIONS
Heat oven to 375°F and spray an 8x11-inch baking dish with nonstick spray.
Pound the breasts to an even 1” thickness.
Season both sides of the breasts with salt and black pepper.
Place the chicken in the prepared dish.
In a medium bowl, whisk together enchilada sauce, drained tomatoes, and sour cream. Pour the sauce/sour cream mixture over the chicken.
Bake at 375°F for 20-30 or until the internal temperature, of a middle breast, reads 155°F.
Sprinkle breast with the Mexican blend cheese and cook just until cheese is melted and just beginning to bubble.
Remove chicken from the oven and allow to rest 3-4 minutes.
Serving idea: Place a nest of tortilla chips/strips on the plate and place the chicken on top. Drizzle with extra sauce and garnish with chopped cilantro & crumbled Cotija cheese.
