How To make Spice Cake and Butter Cream Frosting
TASTE OF HOME 4/5/94:
2 cups Sugar
1 cup Butter or margarine soften
4 Eggs :
beaten
3 cups All-purpose flour
1 teaspoon Baking powder
1 teaspoon Baking soda
1 teaspoon Ground cinnamon
1 teaspoon Ground cloves
1 teaspoon Ground nutmeg
1 cup Buttermilk
Butter Cream Frosting: 1/2 cup Shortening
1/2 cup Butter or margarine -- soften
1 teaspoon Vanilla extract
4 cups Confectioners' sugar
3 tablespoons Milk
For the cake, in a mixing bowl, cream sugar and butter. Add eggs; beat well. Combine dry ingredients; add to creamed mixture alternately with buttermilk. Mix well. Pour into a greased and floured 13x9x2" baking pan. Bake at 350 degrees for 35-40 minutes or until the cake tests done. Cool.
For frosting, cream shortening and butter in a mixing bowl. Add vanilla. Gradually beat in sugar. Add milk; beat until light and fluffy. Frost cake.

Pumpkin spice buttercream | Easy Fall recipe
Today I’ll be sharing one of my favourite fall frosting recipes! Follow along with this short video recipe and learn how to make this incredibly easy and delicious pumpkin spice buttercream. This buttercream has all the classic fall spices flavours and is fantastic on pumpkin cupcakes, carrot cake and so many other fall desserts!
Pumpkin Spice buttercream recipe:
Pumpkin spice ingredients:
3/4 teaspoons ground cinnamon
1/2 teaspoons ground ginger
1/4 teaspoons ground nutmeg
1/8 teaspoon ground cloves
Directions:
Combine spices in a small bowl, mix until well combined and set aside.
Pumpkin spice buttercream ingredients:
1/2 cup room temperature butter
1+1/2 cup powdered sugar (can use only 1 cup for a less sweet frosting)
1-2 tablespoons milk (skip if using only 1 cup of powdered sugar)
1-2 teaspoons pumpkin spice mix
Directions:
In a medium bowl cream room temperature butter on low until smooth and creamy. Add 1/2 of the powdered sugar and mix until combined. Add 1-2 teaspoons (to taste) of pumpkin spice mix into the remaining powdered sugar before adding to the bowl. Mix until well combined, scrape down the sides of the bowl throughout this process. If the frosting is too thick, add1-2 tablespoons of milk until the desired consistency is reached!
Large Batch Pumpkin Spice recipe:
6 teaspoons ground cinnamon
4 teaspoons ground ginger
2 teaspoons ground nutmeg
1 teaspoon ground cloves
Whisk all ingredients together and then transfer to an airtight container. Use this homemade pumpkin spice for all your fall recipes!

Applesauce Cake Ingredients ►
4 oz (113 g) unsalted butter (softened)
10 oz (283 g) granulated sugar
3 oz (85 g) vegetable oil
1 large egg (room temperature)
10 oz (283 g) cake flour
1 tsp baking soda
1/8 tsp cloves
1/4 tsp nutmeg
1/4 tsp ground ginger
1 1/2 tsp cinnamon
1/2 tsp salt
12 oz (340 g) applesauce (unsweetened)
1 tsp vanilla
Cream Cheese Frosting
16 oz (454 g) cream cheese (softened)
8 oz (227 g) unsalted butter (softened)
1 tsp vanilla extract (you could also use lemon or orange)
1/2 tsp salt
36 oz (1020 g) powdered sugar

Gingerbread Spice Cake Recipe | Mascarpone Buttercream Frosting | Cooking Diaries by Waseem
This recipe from the 1850s is the perfect way to make Gingerbread Spice Cake and it makes for a delicious Christmas dessert. This cake has all the amazing flavors from molasses and spices. Think of it like a molasses cookie in a cake form. I frosted this cake with delicious Mascarpone Buttercream. It adds a bit of tart sweetness without being overly sweet, and the combination of ginger and other spices with mascarpone is just perfect. If you cannot find mascarpone cheese, then you can just use Cream cheese frosting and that goes excellent with this cake as well.
I decorated the cake further with trees, sprinkles, stars etc. (all edible) to make it more festive and to fit into the holiday theme, but this cake is a delicious treat just plain with simple frosting. Try this cake for your holiday gatherings and brag about the 170 year recipe ???? Enjoy!

Ingredients for the cake:
• All Purpose Flour – 2 and ½ Cups (300 gm)
• Sugar – ½ Cup (100 gm)
• Buttermilk – 1 Cup
• Molasses – 1 Cup
• Unsalted Butter – 1 Stick (1/2 Cup or 8 tbsp)
• Large Egg – 1
• Baking Soda – 1 and ½ tsp
• Cinnamon Powder – 1 tsp
• Ginger Powder – 1 tsp
• All Spice Powder – ½ tsp
• Cloves Powder – ½ tsp
• Salt – ½ tsp
• Vanilla – 1 tsp
Steps:
1. Grease a 9X9 inch cake pan and line it with parchment paper.
2. In a bowl sieve all dry ingredients – flour, salt, baking soda and spices, mix them together and keep aside.
3. In a separate bowl, add softened room temperature butter and sugar, and mix them well until they forma into a nice thick paste.
4. Add egg and vanilla to the butter sugar mixture and mix until well incorporated.
5. Mix buttermilk and molasses together and add it to the butter, sugar, and egg mixture. Mix them all together.
6. Add the dry ingredients mixture into the wet and fold them using a spatula until the dry ingredients are just combined with wet. Do not over mix the batter.
7. Pour the batter into a prepared pan and smooth the top with spatula.
8. Bake at 350 F for 45 minutes. Check by inserting a skewer into the middle of the cake for doneness.
9. Let the cake cooldown for 10 to 15 minutes in the pan, on the countertop. After that flip the cake onto a cooling rack and let the cake cooldown completely.
10. If you plan to make a multi-tier cake, then just multiply the recipe by the number of layers you would plan to have in your final cake.
Ingredients for Mascarpone Buttercream Frosting:
• Mascarpone Cheese – 8 Oz
• Unsalted Butter – 10 tbsp
• Powdered Sugar (sifted) – 3 Cups
• Vanilla – 1 tbsp
Steps:
1. This frosting is enough for one layer of cake. If you plan to make a multi-tier cake, then just multiply the recipe by the number of layers to make enough frosting to layer in between and frost the entire cake.
2. Mix the softened room temperature butter and mascarpone cheese together until it forms into a thick, fluffy paste.
3. Add vanilla and mix it one more time.
4. Gradually add powdered sugar and mix until incorporated into the buttercream. Repeat until all sugar is added into the buttercream.
5. Layer the buttercream in between cake tiers and frost the entire cake with it. Delicious Gingerbread Cake with Mascarpone Buttercream Frosting is ready.
Optional Steps:
1. If you desire to decorate the cake further, then you decorate based on your imaginations and creativity.
2. I have added about a quarter cup of cocoa powder to the leftover frosting and made it into a chocolate buttercream and used it to decorate further.
3. Got a few sugar cones and cut them to get different heights.
4. Frosted the cones using a small star piping tip to make them look like trees of different heights.
5. Arrange the trees onto the cake and add some sprinkles and stars.
6. Finally dust some powdered sugar to give winter snow look.
7. This dessert is going to be the star for your holiday gatherings. Enjoy!
