Pumpkin Spice Biscotti
Ingredients:
13/4 C Flour
1 Tsp. Baking Powder
1 Tbs. Pumpkin Spice Powder
2/3 C Sugar
4 Tbs. Butter
1 Tsp. Vanilla Extract
2 Eggs
Procedure:
1. Mix flour, baking powder, pumpkin spice powder in a bowl & set it aside.
2. In another bowl, beat butter with sugar until creamy. Add eggs one at a time and vanilla extract.
3. Add in the flour mixture & fold in to combine before beating with an electric mixer.
4. Using your hands, knead to form a dough & divide it in half to form into a log.
5. Prepare a baking sheet lined with parchment paper & place the two logs.
6. Preheat your oven to 350 degrees & bake for 30 minutes.
7. Let the logs cool & slice them thinly. Place the cookies back on the baking sheet & bake them for 10-15 minutes until golden brown.
8. Enjoy dunking them with a cup of coffee or tea.

Italian Chocolate Spice Cookies - Santina’s Biscotti Scuri!
These cookies are an Italian tradition, especially during the holidays and special events. They are made with cocoa, coffee, walnuts, raisins and spices which bring all the flavors together into a mouth-watering, delicious cookie! My beloved mother, Santina, used to always make huge batches of her cookies when Christmas season began. Since her passing, I keep this tradition going with my own family and wanted to share this delicious recipe of hers with you! There are many variations, but this is the one my mother perfected on her own and it was loved by many. Oh, and by the way, this delectable cookie happens to be vegan! Recipe is below. SANTINA'S BISCOTTI SCURI - (dark cookies)
Preheat oven 350° F
3 1/3 cups flour
1 tablespoon baking powder
2/3 cup shortening
1/2 cup hot coffee
1/2 cup hot water
1 1/4 cup white sugar
1/2 cup cocoa powder
1/2 teaspoon salt
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/2 cup chopped walnuts
1/2 cup coarsely chopped raisins
Icing:
1 1/2 cup confectioner's sugar
1 teaspoon vanilla extract
2-3 tablespoons water
Bake cookies in 350° oven for 10 minutes, until firm to the touch.
Makes 5 dozen cookies.

Easy Pumpkin Spice Biscotti | The Coffee Dipper
Easy Pumpkin Biscotti is perfect with that cup of coffee in morning. It's starts Fall Baking off with a bang. It's also the star for Thanksgiving or Christmas breakfast. Follow along as I demonstrate how to make this easy delicious breakfast cookie.

Pumpkin Spice Biscotti (adapted from She Loves Biscotti)
Ingredients
1 cup flour, all purpose 142 grams
1 cup flour, whole wheat 156 grams
1 teaspoon baking powder
4 teaspoons pumpkin spice
½ teaspoon salt
2 eggs room temperature
3/4 cup brown sugar
1/2 cup pumpkin puree
1/4 cup vegetable or canola oil
2 teaspoons vanilla extract
Instructions
Preheat oven to 325° F. Position rack in the center.
Line baking sheet with parchment paper. Set aside.
In a medium bowl, whisk together the dry ingredients (flour, baking powder, pumpkin spice, and salt).
In another bowl, whisk together eggs and brown sugar for a few minutes.
Add the pumpkin puree, oil, vanilla extract, and whisk together for another minute or so.
Add the liquid ingredients to the dry ingredients; stir with wooden spoon until just incorporated.
Use a large spoon to scoop out the dough and place it on the parchment lined cookie sheet. Add another scoop adjacent to the batter on the cookie sheet and keep going until two logs are formed.
With damp fingers, shape into a log shape.
Bake for approximately 30 minutes or until golden brown in color and firm to the touch. Allow to cool slightly for about 10 minutes.
Remove from baking sheet and transfer to cutting board.
Using a serrated knife, slice cookies at an angle about 1/2 - 3/4 inch thick.
Place slices back on the baking sheets, and return them to the oven for about another 15-20 minutes (the longer they stay in the oven, the crispier they get). Turn them over at the half way mark.
Place on a wire rack to cool.
