3 lg Firm ripe pears
5 Whole cloves
3 Thick lemon slices
1/4 Teasp. cinnamon
1/4 c Granulated sugar
1/8 Teasp. salt
Day or so before: Pare, halve, and core pears; slice 1/2" thick. Add lemon slices and combined remaining ingredients; simmer, covered, 15 to 25 min.; or until tender. Cool; refrigerate. Serve with poultry, or as dessert. Makes 4 servings.

OLD SCHOOL APPLE PEAR CHUTNEY
This is an item that love to eat with my OLD SCHOOL CHRISTMAS HONEY GLAZED HAM
RECIPE:
1 apple diced
1 pear diced
1 diced sweet onion
1/2 cup grated ginger
1/2 cup yellow raisins
2 tbsp butter or oil
1/4 cup apple cider vinegar
1/2 cup sugar
1.5 tsp salt and pepper
1 tsp cinnamon
1 tsp nutmeg
1 tsp orange zest
1/2 fresh orange juice
1 tbsp yellow mustard or turmeric
Melt butter or oil over med high heat in a saucepan,add onions and cook until tender add apples After a minute, add pears Once the apples and pears have sauteed, stir in ginger and raisins and add brown sugar sugar,cinnamon and nutmeg. De glaze the saucepan with the apple cider vinegar ,add orange zest and orange juice and turmeric reduce on medium heat until texture of chutney is jam-like and apples and pears are translucent, approx 15-30 minutes,season with salt and pepper
remove from heat and place in jars or air tight container
chutney is good on pork,duck,chicken and fish

APPLE PEAR HOLIDAY CHUTNEY
1 apple diced
1 pear diced
1 cup diced butternut squash
1 diced sweet onion
1/2 cup candied ginger diced
1/2 cup craisins
2 tbsp butter
1.5 cups hard pear cider
1/4 cup apple cider vinegar
1/2 cup sugar
1.5 tsp salt
2 tsp black pepper
1 tsp fresh rosemary
1 shot of Scotch
1 tbsp wholegrain mustard
1 tbsp maple syrup
Melt butter over med high heat in a saucepan. Saute apples and butternut squash. After a minute, add pears and remaining apples. Once the apples and pears have sauteed, stir in candied ginger and craisins and add sugar. Deglaze the saucepan with the hard pear cider, stir and add cider vinegar, salt, and pepper, rosemary. Let reduce on medium heat until texture of chutney is jam-like and apples are translucent, approx 15-30 minutes. Add in mustard, lemon juice, maple syrup, and scotch.
