How To make Spicy Tofu Salad
1 1/2 lb Tofu
1 c Cucumber, julienned
1 c Carrot, julienned
1 c Mushrooms, sliced
1 sm Iceberg lettuce
1/2 lb Lima beans, lightly cooked
TOPPING:
1/3 c Peanuts, chopped
2 Green onions, chopped
5 Red & green chilies, chopped
DRESSING:
1 1/2 tb Chili sauce, see recipe
3 tb Soy sauce
2 ts Sugar
1/2 c Rice vinegar
1/2 c Tofu
Cut the tofu into cubes. Drain in a colander. Put the lettuce on the bottom of a shallow bowl or attractive serving dish. Place the tofu in the centre & surround it with one mound each of cucumber, carrot, mushrooms & peanuts. Refrigerate until chilled. Combine the TOPPING ingredients in a blender or food processor & whip into a rough mixture. Blend together the dressing ingredients At serving time, sprinkle the topping mixture over the salad then pour on the dressing. Toss at the table.

The quickest meal: Spicy Silken Tofu
My favorite lazy recipe (tbh hardly even a recipe). There are also different chilled tofu dishes in Japan, Korea, and China -- and sometimes they're also steamed, but I prefer the tofu cold ????
// INGREDIENTS //
- 12oz block of silken tofu
- 1 garlic clove, minced
- 2 green chilies, finely chopped (+/- based on how hot your batch of chilies is and how spicy you want the dish)
- 1 green onion, chopped
- 5 Thai basil leaves, chopped into thin strips (optional or you can sub with another herb like cilantro)
- 1/2 cup diced cucumbers
- 2 tbsp soy sauce
- 1 tbsp black vinegar
- 1 tbsp maple syrup
- 1/2 tsp chili oil (+/-)
// RECIPE //
1️⃣ In a small bowl, combine all your ingredients, except the cucumber and basil. Taste and adjust any seasonings as needed bc we all have different preferences!
2️⃣ Open your refrigerated silken tofu, and carefully place onto a plate. Drain any excess liquid from the plate.
3️⃣ Top with chopped cucumbers, basil, and the sauce. That's it! Slurp and enjoy

I almost missed the opportunity to share one of my favorite late-lunch ideas. Spicy Tofu Salad has an odd mix of spices and seeds, but man does it hit the spot!

Delicious Tofu Salad With Chili Dressing Recipe
Ingredients:
Dressing
1 cup coriander
1 inch ginger
3 cloves garlic
1 green chili
2 tbsp olive oil
2 tbsp dark soy sauce
2 tbsp sriracha
¼ tsp brown sugar
Salad
400 gm extra firm tofu
3 cups lettuce
½ cup red onion
1 large tomato
1 cucumber
Instructions:
1. Prepare the dressing by blending fresh coriander with ginger, garlic cloves, green chili, olive oil, dark soy sauce, sriracha, and brown sugar then set aside
2. Remove any excess water from the extra firm tofu
3. Cut tofu into bite-size cubes and coat it with the dressing
4. Marinate the tofu for 30 minutes
5. Coat the marinated tofu in cornstarch
6. Fry the tofu until golden brown and crispy
7. Use a large clear salad bowl to mix lettuce, thinly sliced red onions, heirloom tomato pieces, and thinly sliced cucumber
8. Pour over the homemade salad dressing
9. Toss in the fried tofu
10. Finish off with salt and pepper to taste
11. Ready to enjoy!
