Excuse me, but how cute are these????? This is my favorite character from all of Studio Ghibli, minus the little bird spirits that bathe in the hot tubs in Spirited Away.

1000 subscribers… In the world of big-name YouTubers, this number comes across as a drop in the bucket; a figure that seems insignificant in the world of Pewdiepie, Strictly Dumpling, Binging With Babish and many more.
But to a small Youtuber who started making videos for fun (and to cope with the mess that is 2020), it’s something surreal. Over the course of nearly 9 months, over 1000 people have deemed that the content I produce is worth a subscription and return to the channel for more.
Whether you’ve only recently subscribed, or if you were one of my day 1’s (sorry about the horrible lighting and awkward pauses in audio, good lord those first few videos were awful) I sincerely thank you for all the support you’ve given me and the Anime Kitchen channel.
To celebrate us hitting this momentous milestone, we’re taking a stroll into the iconic world of Studio Ghibli and recreating the High Tea platter from Spirited Away. In this episode we’ll be making a beautifully light and airy vanilla chiffon cake covered in a lemon swiss meringue buttercream, two types of Japanese butter cookies, and some cute little jelly cups.

Ingredients:
Vanilla Chiffon Cake:
• 53g vegetable oil
• 3 large eggs, separated
• 90ml water
• 7.5ml/½ tbsp vanilla extract
• 140g cake flour
• 168g granulated white sugar, divided into 118g and 50g portions
• 7.5g/½ tbsp baking powder
• ¼ tsp salt
• ½ tsp cream of tartar
Lemon Swiss Meringue Buttercream
• 100g granulated white sugar
• 90g egg whites, room temperature
• 225g unsalted butter, room temperature, cubed
• 5ml/1 tsp vanilla extract
• 2.5ml/½ tsp lemon juice + 1tsp lemon zest
• Yellow food colouring
Jelly cups
• ½ pack strawberry jelly mix
• ½ pack lime jelly mix
• Water
Japanese Butter Cookies & Jam Cookies:
• 240g cake flour
• 100g caster sugar
• 120g unsalted butter, room temperature
• 1 egg, well beaten
• 1tsp/5ml vanilla extract
• 12g/1tbsp unsweetened cocoa powder
• 1g/½ tsp salt
• 50g crushed, red hard candies

These spectacular confections have a liquid center — and are filled with vodka, wine and other popular spirits. They also make non-alcoholic offerings as well. Chocolat is the only chocolatière in the entire nation to produce this type of product! Edible gems unlike anything you've had before.
Not only did their creator, Lecia Duke, design the capsule that holds the liquid intact (to prevent any co-mingling with the chocolate), she also designed the equipment necessary to manufacture these chocolates. How cool!
The real difference in her product lies in a thin sugar shell that separates the liquid from the chocolate; fragile jewels of liquid, allowing both parts to remain pristine in taste.
We sampled a few of Chocolat's standouts, like Lecia's Double Chocolate Flavored Vodka, her Bourbon Tender (which holds 10-year old handmade batch bourbon inside) and the Raspberry Wine, made from real red raspberries.
These guys aren't necessarily a diet buster either...at max they contain 28 calories per piece, along with 2.8 grams of sugar. There's a certain approach to eating these, which Lecia fills us in on in our short video. Ideally you want to place entire piece in mouth, warm it up, and once it crushes and you suck the chocolate off, the center pops and the liquid is released.
The best seller to date is their Tequila Rose: a pink creamed tequila liqueur that's been going strong since 2012.

#1 Kiki’s Breakfast 1:40
for the pancakes:
1⁄3 cup (80g) plain soy yogurt
3 tbsp unsweetened applesauce or mashed banana
a few drops vanilla aroma
1 tsp lemon juice or vinegar
2 tbsp water or milk (plus additional 1-2 tsp if needed)
1⁄2 cup plus 2 1⁄2 tbsp (85g) flour
2 1⁄2 tsp baking powder
1/4 tsp salt
1-2 tbsp powdered sugar
for the pan: 1 tsp coconut oil
butter for serving
yields 2 larger pancakes
also: buns or bread of choice, tomatoes, vegan cheese and sausage
#2 Osono’s Hot Chocolate 4:01
1 tbsp ready made hot cocoa mix OR 2 tsp unsweetened cocoa
1-2 sugar cubes
hot water (about ½ cup)
non dairy milk (about ¼ cup)
#3 Bakery Bread 5:02
1/2 cup cold water (125ml)
1/2 cup boiling water (125ml)
3 tbsp olive oil
1 tbsp powdered sugar
1 packet active dry yeast = 7g
2 ½ cups all purpose flour (300g)
½ cup whole wheat flour (60g)
2 tbsp sourdough extract powder
1 1/4 tsp salt
also: 1 tsp oil for kneading, a sprinkle of extra flour for the surface if needed,
a few drops of oil for brushing the top of the dough
→ 1 oval loaf , about 25cm - 30cm wide
#4 Howl’s Breakfast 7:48
bacon:
5 square rice paper sheets, cut into 3-4 cm strips
marinade:
3 tbsp smokey bbq sauce
1 tsp mustard
3 tsp oil
2 tsp rice vinegar
optional: 1 tsp gochujang (for spice and intense red color)
→ yields about 5 thick bacon pieces
vegan sunny side up eggs:
40g glutinous rice flour/regular rice flour (¼ cup + 1 tbsp)
60ml vegan cream, cuisine or milk (¼ cup)
60ml soy yogurt, unsweetened (¼ cup)
A pinch of salt
1 tsp rice vinegar
a pinch of kala namak for serving
1 tbsp oil for the pan
6 - 8 yellow/orange cherry tomato tops
also: bread, tea
#5 Ponyo’s / Sosuke’s Sandwich 13:22
4-6 rice paper sheets, cut into ovals or hearts
marinade:
3 tbsp smokey bbq sauce
1 tsp mustard
3 tsp oil
2 tsp rice vinegar
optional: 1 tsp gochujang (for spice and intense red color)
→ yields 4-6 ham slices
also: sandwich bread, lettuce, vg cheese
sandwich sauce: 1 tbsp vegan mayo, 1 tsp ketchup, 1 tsp mustard

for the egg whites:
300g silken or soft tofu (=10,6oz)
2 tbsp vegan cream/cuisine
3 tsp agar agar
pinch of salt
pinch of black salt (kala namak)
if needed 1-3 tbsp water, to help the mix blend
for the egg yolk mix:
1 tbsp cornstarch (10g)
1 tsp nutritional yeast
¼ tsp black salt
generous pinch of regular salt
1 ½ tbsp vegetable oil
few drops yellow or orange food coloring
¾ cup (180ml) water (room temp or slightly warm)
→ 6-8 eggs
(there will be some egg yolk leftover, but it keeps in the fridge for a few days)
also: vg instant noodles, ham from recipe #5, spring onion
