How To make Stately Coconut Layer Cake
1 c Shortening
2 c Sugar
4 Eggs
3 c Sifted cake flour
2 1/2 ts Baking powder
1/2 ts Salt
1 c Milk
1 ts Almond extract
1 ts Vanilla extract
Lemon-orange filling Or; see recipe Pineapple filling; see -recipe Boiled frosting; see recipe 1 sm Fresh coconut, or; grated
1/2 c Flaked coconut

Cream shortening; gradually add sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix after each addition. Stir in flavorings. Pour batter into 3 greased and floured 9-inch round cakepans. Bake at 375
degrees for 20 to 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove from pans, and let cool completely on wire racks. Spread Lemon-Orange Filling or Pineapple Filling between layers; spread Boiled Frosting on top and sides, -----

Chocolate Mascarpone Dacquoise from Chef Jerry Clare
The Belmont Inn on the coast of Maine boasts 99
windows to let in the light, and an easy walk into
town for shopping and harbor watching. It also boasts
wonderful food. Former innkeeper Jerry Clare made
this lovely dacquoise, a cake made of meringue
layers. It is similar to tiramisu, adding hazelnuts to the
wonderful mixture of chocolate, coffee, and
mascarpone. The most difficult step is cutting the
finished dacquoise: the chef suggests an electric knife
or a serrated knife, cleaned between each cut. You'll
want to keep the cutting pressure light to avoid
flattening the meringues and filling.
