Steak Diane a 70's classic with brandy, cream and mushrooms
Steak Diane, a massive hit during the 70's is simple to make and uses only standard ingredients, yet the massive hit of brandy and cream, what's not to like! Although you can use whatever steak you can afford, the dish cries out for a really nice steak such as tenderloin or New York strip. A great retro recipe that's as good today as it ever was

Slow Cooked Steak Diane Casserole
This Slow Cooked Steak Diane Casserole is a real crowd pleaser and makes a great make-ahead meal, just the thing if you’re feeding all the family! My slow cooked take on a classic Steak Diane, giving you tender fall apart beef and a sauce that's full of flavour.

Ingredients:
2 tbsp vegetable oil
1.5 kg braising beef or casserole beef (chopped into bitesizechunks)
3 tbsp plain/all-purpose flour (you can use gluten free plain flour if required)
½ tsp salt
½ tsp freshly ground black pepper
1 large onion (peeled and chopped)
4 cloves garlic (peeled and minced)
2 tbsp tomato puree/tomato paste
4 tbsp brandy or whisky
1 tbsp Worcestershire sauce
1 Litre beef stock (3 stock cubes plus water is fine, or use homemade stock or bouillon for gluten free)
300 g chestnut mushrooms, thickly sliced (thickly sliced)
1 tbsp cornflour cornstarch mixed with 3 tbsp cold water, to make a slurry (optional)
120 ml double (heavy) cream
small bunch fresh parsley roughly chopped

Steak Diane Recipe with Mushroom Sauce - Gregcipes
Steak Diane is a classic American dish with a cool name and an even cooler style of preparation, traditionally being flambéd, but unfortunately you won't get to see me do that because I don't want to burn my house down. Set on fire or not, this dish is to die for, especially the sauce which can be made on it's own and used for whatever you see fit. I hope you enjoy!
Ingredients:
2 eye of round steaks
1 tablespoon of chives chopped
1/2 shallot finely chopped
1/2 cup of sliced baby Bella mushrooms
1/4 cup of brandy
1/2 cup beef stock
1/4 cup of heavy cream
2 teaspoons of Worcestershire sauce
2 tablespoons of butter
2 teaspoons of Dijon mustard
Salt and pepper
Directions:
Season steaks. Mix together Worcestershire sauce, Dijon mustard, and beef stock. Melt butter in a pan over medium high heat. When foaming subsides and butter is just starting to brown a bit, put in the steaks. Once seated, turn over. If using thin steaks, they may have seized up and become convex, they'll even out but make sure the whole steak is in contact with the pan. Baste it with the butter. Once the steak is cooked, remove it from the pan. Cooke the shallots and the mushrooms in the remaining butter. Once the mushrooms and shallots are cooked, deglaze the pan with the brandy. Once the brandy is almost all evaporated, add the beef stock mixture. Season and let cook for 1-2 minutes then add the heavy cream. Let cook for 1-2 more minutes and then turn down the heat and add the chives. Stir and then pour the sauce over the steaks (or add the steaks back to the pan to cook in the sauce if they can take more cooking). Serve and enjoy!

1 1/2 Tbsp (28g) - Unsalted Butter
1 tsp (5ml) - Olive Oil
1 - Brown (Yellow) Onion, Diced -
2 - Garlic Cloves, Minced -
2 Tbsp (40ml) - Brandy or Cognac (Substitute For Beef Stock)
2 tsp (20g) - Tomato Paste
2 tsp (18g) - Dijon Mustard
2 Tbsp (40ml) - Worcestershire Sauce
1/4 Cup (60ml) - Beef Stock -
1 Cup (250ml) - Thickened Cream
5g (0.1oz) - Flat Leaf Parsley, Chopped
