garlic, cloves, minced

onion, red, sliced or chopped

beef bouillon

tablespoon
ketchup, OR tomato paste
1
teaspoon
worcestershire sauce
1/2
cup
sour cream
1
chives, OR parsley, chopped, for garnish, if desired
Directions:
Trim excess fat from meat. Cut meat in thin strips. Combine flour with salt, pepper, paprika and mustard. Toss meat with seasoned flour.
Melt 1/3 of the butter in large heavy skillet. Add garlic; saute until golden. Remove; set aside. Melt 1/3 more butter. Saute onions for 5 to 6 minutes. Remove; set aside. Heat remaining butter. Saute meat strips until browned; add bouillon and onions.
Stir to dissolve browned bits in bottom of skillet. Simmer, uncovered, 15 to 20 minutes, until meat is tender and mixture is thickened, stirring occasionally. Add tomato ketchup or paste, worcestershire sauce and sour cream. Heat gently.
Serve over noodles or rice. Sprinkle top with chives or parsley, if desired.
Makes 5-6 servings.
Notes: Always stir sour cream into a hot sauce or soup just before serving. Heat it gently and only until the mixture is warmed through. Allowing the mixture to boil will cause curdling. milk products won't separate as easily in flour-based mixtures. This dish comes together rather quickly, and is so good! beef strips simmer in a richly flavored sauce. Serve it with rice or warm, crusty French bread to take advantage of the super yummy sauce!

SLOW COOKER PEPPER STEAK WITH ONIONS

This is my tried and true recipe for pepper steak! I make a concentrated sauce that goes into the slow cooker with beef, bell peppers and onion. It thickens into a velvety smooth gravy, perfect over rice.

RECIPE:
INGREDIENTS:
2 lbs. beef strips Look for beef cut into strips already or buy top sirloin and cut into 1/2 inch strips (round steak works well too).
1 green bell pepper sliced thick
1 red bell pepper sliced thick
1 white onion sliced
For the sauce:
1/2 cup water
2 beef bouillon cubes
3 Tbsp. soy sauce
1 tsp. Worcestershire sauce
1/4 tsp. ground ginger
1/4 tsp. garlic powder
1/2 tsp. black pepper
2 tsp. brown sugar
1 Tbsp. cornstarch
1/4 tsp. red pepper flakes (optional)
SLOW COOKER SIZE:
4-quart or larger
INSTRUCTIONS:
In a small microwavable bowl add the water and the beef bouillon cubes. Place in the microwave for 30 seconds, mix until dissolved. I use the back of a spoon or the tip of a whisk to break up the bouillon cubes. (If you don't have a microwave, boil your water on the stove-top).
Add the soy sauce, Worchestershire sauce, ginger, garlic powder, pepper, brown sugar and cornstarch to the bowl with the water and bouillon. Whisk until smooth. (Add the red pepper flakes if you desire). Pour this mixture into the slow cooker.
Add the beef, bell peppers and onions onto the sauce in the slow cooker.
Cover and cook on LOW for 5 hours.

This chopped steak recipe is seared to perfection and then topped off with herbs, caramelized onions and mushrooms and served with a side of homemade hash browns for the perfect weeknight family meal.

Ingredients for this Recipe:
6 strips diced raw bacon
2 pounds ground sirloin formed into 8 ounce patties
2 small peeled and thickly sliced yellow onions
4 cups domestic mushrooms cut in half
4 cups beef stock
2 teaspoons of fresh thyme
2 tablespoons of olive oil
4 shredded Idaho potatoes
sea salt and cracked fresh pepper to taste
Prep Time: 20 Minutes
Cook Time: 30 Minutes
Serves: 4
1. Season the beef patties with salt and pepper and set aside.
2. In a hot large saute pan over medium heat add in bacon and cook until crispy. Once the bacon is cooked reserve to the side and use the same pan to add seasoned meat.
3. Sear the meat for 2 to 3 minutes per side until browned but not cooked through.
4. Remove the chopped steaks from the pan once brown and set aside on a plate. Next, add the onions and mushrooms to the pan, turn the heat down to medium and caramelize, about 12 to 15 minutes.
5. Once the vegetables are nice and golden brown, deglaze with the beef stock add in the thyme, salt and pepper and bring to a boil. Add back in the chopped steaks and simmer over low heat for 20 to 25 minutes or until the vegetables are tender and the chopped steak is cooked through.
6. In a separate large saute pan over medium high heat add in the olive oil and shredded potatoes. Cook for 20 to 25 minutes flipping the potatoes over every 4 to 5 minutes until golden brown. Season with salt and pepper.
7. Serve the chopped steak with the hash browns, onions, mushrooms, gravy and thyme for garnish
