Cranberry & Grapefruit scone recipe.
Every day is perfect for scones, and this recipe will guide you through exactly how to make soft scones. These scones come out crisp on the outside and super soft and light in the middle. These are extremely good.
5 Ingredients is all that you need, one of them being zest from the sweet sunrise grapefruits. Can substitute the grapefruit with any citrus. Scones should be light and flaky, not heavy and flat. Love them!
Total time : 40 - 50 minutes
Makes : 12 Scones
Ingredients :
3 Cups Self-raising flour
100 Grams sugar
180 Grams of dried cranberries
600 Grams of fresh cream
1 Tablespoon of sweet sunrise grapefruit zest (can use any citrus zest)
3 Egg yolks
2 tablespoons of whipped cream
Instructions :
1. Adjust oven rack to middle position and heat the oven to 220 degrees C.
2. Line a large baking sheet with parchment paper or use a silicon baking mat.
2. In a medium bowl add all your dry ingredients and give it a good mix. And then go ahead and add your cream, mix well. Leaving no flour unmixed, add a bit more cream if needed.
3. Transfer the dough and all dry, floury bits to a lightly floured work surface. Knead the dough 3 to 5 times until it just comes together.
4. Form into an 8-inch circle. Cut into 8 triangles, or just use a cookie cutter. Place scones onto the baking sheet.
5. Make your egg wash, mix 3 egg yolks with 2 tablespoons of cream. And brush your scones, on top and on the sides.
6. Bake about 20 minutes check by inserting a toothpick through it and then you’ll know how long it’s left to finish baking. Probably around 10-15 minutes more. Bake till golden brown.
7. Cool at least 10 minutes before serving.
8. Enjoy.
Notes :
– Serve scones with your favourite jam, some butter and grated cheddar cheese.

[5AM IDEAL MORNING ROUTINE | slow and relaxing morning]
Can you believe it’s already almost May?
I recently stumbled upon my (very motivated) journal entry from the 1st of January. Alongside the myriads of resolutions I have long forgotten about, I found notes on my ideal morning routine. This routine, together with a pairing night time routine, was supposed to help me achieve my resolutions haha. So today I’d like to try and follow it (for once). Luckily, it’a not too different from my usual routine (minus the fact I wouldn’t do all of them in one morning) and I actually really enjoyed it and hope I’ll be able to incorporate some of these habits in my daily routine more consistently.
Did you write down any goals for the new year? How have they progressed so far?
I hope you will enjoy these little fragments of my mundane life~
