How To make Sweet Potato Pancakes
2 tb Unsalted butter; melted
1/2 c Cooked sweet potatoes
- peeled and chopped - or roughly mashed 1 Egg
1/3 c All-purpose flour
1/2 ts Baking powder
1/4 c Milk (or more)
Sour cream PLACE SWEET POTATOES in a mixing bowl, add egg and mix well. Stir in the flour and add the baking powder. Add up to 1/3 cup of milk, stirring. Stir in 1 tablespoon butter. The mixture should have the consistency of thick, lumpy sauce and be able to coat a wooden spoon. Place a non-stick or heavy iron skillet over medium heat on top of the stove and add 1/2 teaspoon butter. Spoon 3 tablespoons of batter per pancake into the skillet and cook until bubbles rise to the surface of the pancakes and break, about 1 to 2 minutes. Using a spatula, flip the pancakes and cook another 2 minutes. Remove pancakes from the skillet and keep warm on a covered plate in the oven. Repeat the procedure until all the pancakes are cooked. After the first batch is cooked, add as little butter as possible without allowing the pancakes to stick to the bottom of the pan. Serve with sour cream. Makes 12 small pancakes.

Ingredients:
1 ¼ Cup of Smashed Sweet Potato (125g)
1 Egg
3 Tablespoons of Melted Butter (45ml)
1 ½ Cups of Flour (210g)
2 ½ Teaspoons of Baking Powder (12.5g)
1 Teaspoon of Baking Soda (5g)
1 Teaspoon of Salt (6g)
1 Teaspoon of Cinnamon Powder (2.8g)
¾ Cup of Milk (180ml)
Directions:
1. In a mixing bowl, whisk together the sweet potato with the egg. Add in the melted butter and stir. Blend in the flour, baking powder, baking soda, salt, and cinnamon. Drizzle in the milk a bit at a time and keep whisking until everything is well incorporated.
2. Spray a pan or griddle with cooking spray or butter it. Use medium to low heat for this recipe. Using an ice cream scoop, scoop the pancake batter onto your pan or griddle. (If the batter is too solid, use a spoon to spread it out into a circle.) Cook each side of the pancake for about 2 minutes until golden brown. Transfer to a plate and spread a bit of butter on each pancake. Enjoy!

It’s super simple same as usual pancakes, additional ingredient is some mashed Sweet Potatoes. One of our family favorite & super easy breakfast ideas in my day offs are pancakes. So I do create various different tastes to enjoy the yumminess. These I love to see the beauty of the color first. Create differently. First eat with your eyes then satisfy the tummy ☺ Don’t forget to add real butter & NOT margarine please. Also make an extra batch to freeze to make your life easy. Enjoy the Sweet Potato pancakes...
