1 1/2 c Cold Water 1/2 ts Salt 16 oz Frozen Carrots; 1 Pkg 1 1/2 c Orange Juice 1/2 ts Nutmeg 1 c Chicken Broth
GARNISH:
1 x Orange; Thinly Sliced 1 x Mint Sprigs Combine the water, salt and carrots in a 2 1/2-quart saucepan; cover and bring to a boil. Reduce the heat and simmer for 8 to 10 minutes, or until the carrots are very soft. Remove from the heat and let cool. In a blender or food processor puree the carrots and cooking liquid. In a large bowl combine the pureed carrots with the orange juice, nutmeg, and broth, blending well. Cover the bowl and refrigerate 2 hours or until well chilled. Serve cold with a garnish of one fresh orange slice and one mint sprig.

INGREDIENTS FOR CARROT &CUMIN SOUP Serves 6
25 g butter 600 g carrots, diced 1 onion 1 potato 2 garlic cloves, crushed ½ Teaspoon ground cumin ¼ teaspoon ground coriander Pinch each of turmeric, paprika and ground ginger 1 teaspoon of soft brown sugar 1 ½ pints of vegetable stock Salt and pepper ¼ pint milk Greek yoghurt and coriander to garnish
Method 1. Melt the butter in a large saucepan and stir in the carrots, onion, potato and garlic. Cook gently over a low heat until softened.
2. Stir in all the spices and cook over a low heat for 2-3 minutes. Add the brown sugar and vegetable stock and bring to the boil. Reduce the heat immediately and simmer for 15-20 minutes, until tender.
3. Puree the soup with a blender or food processor until it has a smooth texture. Season to taste and stir in the milk. Reheat the soup over a low heat.
4. Serve the soup topped with a swirl of yoghurt and garnish with a sprig of coriander.

Ingredients
150g carrots 75g red lentils 2 tablespoon olive oil 2 cloves garlic, chopped ¼ medium size white onion, chopped 1 medium-size red chilli, sliced 1 tomato, chopped ½ teaspoon red chilli powder ½ teaspoon turmeric powder ½ teaspoon cumin powder ½ teaspoon coriander powder Salt 750ml vegetable stock
Heat olive oil in a pot and add the garlic, onion and red chilli, saute till soft and add the chopped carrots. Saute for another minute and lower the heat. Add the spice powder, salt and vegetable stock. Bring the mixture to a boil, reduce the heat and remove the scum which comes on the top. Cook on simmer until the lentil and carrots cook. Blitz with an immersion stick blender to form a smooth soup. Serve in a bowl garnished with spring of coriander and drizzle of olive oil. Best enjoyed with some crusty bread.
