How To make Texas Buffalo Chips
1 cup margarine
1 cup shortening
2 cups brown sugar
packed
2 cups granulated sugar
4 eggs
2 teaspoons vanilla
4 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
2 cups oatmeal
2 cups Post Toasties cereal
1 package chocolate chips :
(6 ounce)
1 cup coconut
1 cup pecans -- chopped
Cream together margarine, shortening, brown sugar and granulated sugar. Add egg s and vanilla. Sift and add flour, baking powder and baking soda. Mix in remain ing ingredients. Use ice cream scoop or 1/4-cup measure to drop - 6 cookies to a sheet. Bake 15 minutes at 350 degrees.
Serves 20.

Turkey Quick Tips - Buffalo Turkey Dip
Ingredients:
2 lbs roasted turkey, cooked, chopped, and shredded
1 cup Texas Pete’s Hot Sauce, or equivalent
2 – 8oz pkg cream cheese, softened
1 cup Ranch Dressing
2 cups Cheddar cheese, shredded (divided use)
Tortilla Chips, for dipping as needed
Celery sticks, trimmed, for dipping as needed
Method of Preparation:
1. Combine the turkey and hot sauce in a stainless steel bowl. Blend well.
2. Blend in the cream cheese and ranch dressing and fold in 1 cup cheddar cheese.
3. Spray a 9”x9” baking pan with cooking spray.
4. Pour turkey and cheese mixture into baking dish.
5. Top with remaining 1 cup cheddar cheese.
6. Bake at 375⁰ F for 20-30 minutes, until golden brown on top and 165⁰ on the inside.
7. Serve with chips and celery sticks.

Ingredients
2 cups whole dill pickles, sliced and drained
½ cup & 4 oz all-purpose flour, divided
¼ cup cornstarch or cornflour
½ tsp Italian Seasoning
2 tsp Cajun Seasoning
½ tsp cayenne pepper
salt to taste
1 cup cold soda water
Vegetable oil, for frying

0:09 In a bowl, sift all of the dry ingredients for the batter
0:31 Then slowly stir in the soda water until the mixture turns smooth and evenly combined.
0:36 Set aside in a chilled area.
0:39 Sift ½ cup of all-purpose flour into a bowl.
0:46 Pat the pickles dry with a paper towel.
0:53 Dredge each pickle into the wet and dry coatings.
1:04 Heat 5 cups of oil to 375 degrees F in a large frying pan.
1:07 Use a tong to take them out of the batter and drop them one at a time then fry in the pan until golden brown (1-2 minutes).
1:16 Using a slotted ladle, drain pickles on a paper towel.
