Easy Eight Apple Cake Recipe
Good for: Your breakfast (with coffee) or a pudding for the kids!

Start to finish: Just over 1 hour (including peeling and baking)
Serves: Eight or twelve decent slices
8 eating apples -- peeled, cored and chopped (you need about 450g of apples)
Juice from one lemon
½ teaspoon ground cinnamon
200g plain flour
1 ½ teaspoon baking powder
200g caster sugar
3 eggs
6 level tablespoons of melted butter
1-2 tablespoon milk, as needed
1 tablespoon of Demerara sugar for topping
Heat oven to 180C/350F
Grease and line a 20cm square cake tin. Toss the apples in the lemon juice and ground cinnamon the minute they're chopped.
Combine the rest of the dry ingredients in a bowl. Add the eggs and butter and beat to make a stiff batter. Add milk if it seems a bit dry.
Fold the apples (and any remaining lemon juice) into the batter. Pour into the cake tin, smooth down and sprinkle with Demerara sugar. Bake for 45 to 50 minutes or until a skewer comes out clean.

Delicious & Quick Fluffy Apple Cake / Easy Recipe
This easy apple cake is a delicious dessert that's perfect for any occasion. The cake has a light and fluffy texture and is infused with the sweet and tangy flavors of apples and lemon juice. The cake batter is made with a combination of eggs, sugar, yogurt, milk, sunflower oil, and vanilla extract. This creates a moist and tender crumb that is perfectly complemented by the sweet and slightly tart apple slices.
To make the cake, you'll need 2 apples, which you'll need to peel and slice into thin pieces.In a pan, melt 25 grams of butter and add apple slices, add 15 grams of lemon juice and 20 grams of sugar. Cook the apple slices in the mixture until they soften a little.
Next, prepare a cake batter by whisking 2 eggs with 130g of sugar, adding 60g of yogurt, 60ml of milk, 60ml of sunflower oil, and a dash of vanilla extract to the egg mixture and whisk until well combined. Sift 200g of flour and 8g of baking powder into the mixture and gently fold until the batter is smooth.
Pour the cake batter into a greased 18cm cake pan and arrange the cooked apple slices on top.
Bake the cake in a preheated oven at 180°C for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Once the cake is done, let it cool in the pan for 10-15 minutes before removing it from the pan and placing it on a wire rack to cool completely. If you like, you can grill the cake for an additional 2 minutes until the top is golden brown. This apple cake is a crowd-pleaser and is sure to become a family favorite!

INGREDIENTS:
2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon (optional)
2 large eggs
1/3 cup honey
4 tablespoons coconut oil
130 gram, 5 Oz (1/2 cup) greek yogurt
2 teaspoon pure vanilla extract
2 medium apples
1/2 cup chopped pecans
INSTRUCTIONS:
1. Grate the apples. Chop the pecans; set aside.
2. Preheat the oven to 340°F (170°C), and grease with oil a 9 inch loaf pan.
3. In a small bowl, combine whole wheat flour, baking soda, baking powder, cinnamon and kosher salt. Mix and set aside.
4. In a large bowl, add 2 eggs and whisk. Add honey, coconut oil, greek yogurt and pure vanilla extract. Whisk.
5. Add the dry ingredients and mix until well combined.
6. Add the grated apples and the chopped pecans to the batter. Mix gently.
7. Pour the batter on the loaf pan.
8. Bake for 40-50 minutes or until a tester inserted into the center comes out clean.
9. Let it cool in the pan for at least 20 minutes. Slice and serve. Enjoy :)

Ingredients crust
- 150g flour
- 2 tbsp sugar
- 2g salt
- 120g cold butter (unsalted)
- 4 tbsp ice-cold water
Ingredients topping
- 100g brown sugar
- 100g flour
- pinch ground nutmeg
- pinch salt
- 90g melted butter (unsalted)
- 1 tsp vanilla extract
Ingredients filling
- 10 granny smith apples, peeled and sliced
- 20g melted butter (unsalted)
- juice of a lemon
- 100g sugar
- 1/2 teaspoon ground cinnamon
Method
1. For the crust, add the flour, sugar, salt and ice-cold cubed butter to the food processor
2. Pulse the blade until you have reached a sandy consistency, then slowly add 1 tbsp of ice-cold water at a time until the dough comes together.
3. Remove and cover with cling film and rest in the fridge for at least 1 hour.
4. Take a 20cm springform cake tin and grease it lightly, remove the dough from the fridge and roll it out big enough to fill the tin.
5. Once you have lined your tin, place baking paper and pie weights into the pastry-lined tin and then into the freezer for 15 minutes before you bake at 190°c for 15 minutes.
6. Remove from the oven and take out the pie weights then turn the oven down to 180°c and bake for another 15 minutes, then let the pie crust cool completely.
7. For the topping, simply add all your dry ingredients to a stand mixer on medium speed. Slowly pour the melted butter in, when it starts to clump into small pebbles it's ready.
8. Take the sliced apples and mix them with the butter, lemon juice, sugar and cinnamon.
9. Add the mixed apples to the baked pie crust, you want the apples to come all the way to the top, maybe slightly more.
10. Sprinkle over the topping and bake at 180°c for 45 minutes.
11. Let it cool for at least an hour before you try and slice.

American Apple Pie
MAKES ONE 9-INCH PIE
For the Crust:
2 cups whole-wheat pastry flour
1 tsp. sea salt
1 tbs. coconut sugar
½ cup coconut oil
½ cup ice-cold water
-Preheat the oven to 350 degrees.
-Place all of the pie crust ingredients in a food processor and blend. The mixture will form a large ball of dough in no time at all. Set aside one-quarter of the dough for the crisscross topping.
-Lightly sprinkle your clean work surface and a rolling pin with flour. -Roll the larger portion of the dough into a large circle, about 12 inches in diameter. Transfer the circle to a 9-inch pie pan. Create a ridge around the rim with your fingers. Then poke holes in the bottom of the dough with a fork. This will help the pie crust bake evenly.
-Set aside in the refrigerator and prepare the filling.
For the Filling:
5–6 organic apples
½–¾ cup maple syrup
1 tsp. cinnamon
3 tbs. whole-wheat pastry flour
Peel and core the apples and slice into thin pieces.
Place the apple slices in a large bowl and add the remaining ingredients. Stir to mix thoroughly.
Remove the crust from the fridge and pour the apple mixture into it.
Roll out the remaining dough and cut into 1-inch strips. Weave the strips in a crisscross fashion on top of the filling. Secure the edges to the side of the pie by pinching them together with the bottom part of the crust.
Bake the pie into the oven for 45 minutes to 1 hour. You can check the apples with a fork—they are done when they feel tender—and the lattice top should be golden brown.
Remove the pie from the oven and let it sit for about 15 minutes, to allow the liquid to thicken and cool.
