How To make Tirami Su"Pick Me Up Cake"
2 ea Egg yolks
1/2 c Sugar
1 c Mascarpone Cheese
1 pt Whipping cream, chilled
1 t Vanilla
1 ea Genoise (sponge cake) sliced
Into 3 layers 1/4 c Sugar
3/4 c Espresso or Strong Coffee
1 oz Rum
2 tb Cocoa powder
The first set of ingredients is for the filling. 1) Whisk egg yolks and 1/4 cup of sugar together.
Whisk in the Mascarpone cheese. 2) In a seperate bowl, whip the cream, the rest of the sugar and the vanilla until almost stiff - no peaks. 3) Fold the Mascarpone cheese mixture in to the whipped cream and continue to whip, until stiff. Set aside. 4) Make a fully dissolved syrup with 1/4 cup sugar, 2 tbs water, espresso and rum. 5) Brush a layers of sponge cake with the espresso mixture. with a spatula, smooth about a 1/2 inch thick layer of the mascarpone cheese mixture on top. Brush the second layer with espresso, and place it espressso side down on the first layer. Brush the top with espresso. Spread on another 1/2 inch of the mascarpone cheese mixture. repeat the procedure with the third layer of cake. Cover the top and sides of the cakes with thin layer of the mascarpone filling. 6) With a sieve and a spoon, sprinkle the top of the cake with cocoa powder. Cover the sides of the cake with chocolate shavings. Refrigerate at least three hours. This cake does not hold up well when exposed to any heat, so keep it cool. Tiramisu Cake Recipe [No Music]
Here's another way to enjoy a tiramisu cake using a Genoise Sponge cake as its base cake.

Ingredients: Cake
3 Eggs
75g Sugar
10g Honey
3g Vanilla Extract
25g Unsalted Butter
40ml Milk
1tsp Instant Coffee powder
90g Cake Flour
Mascarpone Filling
150g Mascarpone
40g Sugar
250g Heavy Cream
Cocoa Powder
Procedure
1. Combine the eggs, honey, vanilla, and sugar in a bowl. Stir to combine.
2. Place bowl on top of a pot with hot water (bain marie) and warm up the mixture to 37-40°C or warm to the touch while mixing.
3. Beat at medium speed until it reaches the ribbon stage. That is pale and yellow, and the mixer leaves a slowly dissolving ribbon when it falls off the end of the whisk and back into the bowl. The mixture should have increased in volume as well and no gritty texture.
4. Sift in the flour and gently fold to incorporate while scraping from the sides down to the bottom and lifting up the spatula through the center and over the top.
5. In a separate bowl, combine the butter, milk, and coffee powder. Microwave to melt the butter and just warm enough to dissolve the coffee powder.
6. Place the same amount of batter into the coffee mixture and stir to combine. Add this back into the main batter and fold until incorporated. Do not overmix as the cake relies on the beaten eggs for its structure.
7. Transfer batter into a pan (15cm) lined with baking paper and smoothen the top. Tap for a few times to release any air pockets.
8. Bake in a 160°C pre-heated oven for 20-25 minutes, or until the top is golden brown and the center springs back when pressed.
9. Remove from pan and let it cool down completely before slicing or frosting.
10. For the Mascarpone filling, mix together the mascarpone cheese and sugar in a bowl and stir. Pour in the heavy cream and whisk according to desired consistency. Whisk less to get a thinner consistency that will flow easily on the sides of the cake.
11. Once the cake has cooled down, Trim the bottom part and cut out the center using a cutter.
12. Line the sides of the cake with an acetate and secure it with a tape.
13. Pour in the filling and smoothen the top
14. Dust with cocoa powder
15. Slowly pull the acetate up and let the filling flow to the sides of the cake.
16. Slice and enjoy.

This will be your favorite Tiramisu cake recipe. It comes together fairly quickly and will be ready to serve after 4 hours.
The cake is extremely soft and moist, but not wet. The sponge cake layers are airy and light, with a delicious sweet coffee syrup and a hint of brandy.
INGREDIENTS:
Sponge Cake Layer
8 eggs
1 1⁄3 cup sugar
1 1⁄3 cup flour
1 teaspoon baking powder
Coffee Syrup
1 cup coffee
1⁄4 cup brandy (use milk instead if you need to replace)
1⁄3 cup condensed milk
Mascarpone Frosting
24 ounces mascarpone
2 cups heavy whipped cream
1⁄2 cup milk
1 cup condensed milk
1 tablespoon vanilla extract
1⁄2 teaspoon salt
Bake at 325 Fahrenheit for about 25 minutes.
New York Times Tiramisu Cake
Tiramisù is a delicate classic Italian, coffee flavored dessert. Its delicious layers are made of homemade custard between coffee dipped ladyfingers, and it’s topped with cocoa powder.
For this recipe you’re going to make 2 different parts…a cream…and a cake.
For the cream you’ll need:
4 large egg yolks
½ cup sugar, divided
¾ cup heavy cream
1 cup mascarpone
You can also substitute cream cheese in place of the mascarpone.
For the cake you’ll need:
1 ¾ cups good espresso or strong coffee
2 tablespoons unsweetened cocoa powder
24 ladyfingers
2 ounces bittersweet chocolate, this can be used shaved for an optional garnish.

Tiramisu Loaf Cake
This cake is moist, super easy to make and filled with coffee☕️. That is right! There is coffee in the batter and in every poked hole, too. It is covered with a light cream and dusted with cocoa.
Ingredients:
3 eggs
1 cup sugar
½ cup vegetable oil
1 cup milk
1 ¾ cups all purpose flour
¾ cup natural unsweetened cocoa
⅔ cup hot coffee + a few teaspoons for brushing the cake
500g mascarpone
½ cup icing sugar
Cocoa powder for dusting
Directions:
In a large bowl add the eggs, sugar, oil and milk. Mix until the eggs are combined. Then sift in the flour and cocoa powder. Fold that gently. Add the hot coffee and mix again. That is it! Pour the batter into a loaf pan prepared with baking paper and bake it at 175C for about 30 minutes. Let it cool on a wired rack.
With a skewer poke holes into the cooled loaf and brush it with coffee.
For the cream just mix the 2 ingredients, mascarpone and sugar. With a piping bag add ½ of the cream on top of the cake. Use a knife or an acetate sheet to smooth the cream out. Then, with the rest of the cream create those stripes, as seen in the video. Chill the cake for a couple of hours, and dust it with cocoa powder when ready to serve.
