How To make Toasted Almond Pound Cake
2 3/4 c Sugar
1 1/4 c Butter or margarine
5 Eggs
3 c All-purpose flour
2 ts Ground cinnamon
1 ts Baking powder
1/4 ts Salt
1 c Evaporated milk
1 1/2 c Toasted almonds; chopped
Cinnamon-chocolate sauce ; (see recipe) Whipped cream Recipe by: SUMMER DESSERTS Heat oven to 350 degrees. Grease and flour 12-cup Bundt cake pan or tube pan, 10x4". Beat sugar, margarine and eggs in large bowl on low speed 30 sec, scraping bowl constantly. beat on high speed 5 minutes, scraping bowl occasionally. Mix flour, cinnamon, baking powder and salt. Beat in alternately with milk on low speed. Fold in almonds. Spread in pan. Bake 70-80 minutes or until toothpick inserted in center comes out clean. Cool 20 min. Invert on heatproof serving plate; remove pan. Serve with Cinnamon-Chocolate Sauce (see recipe) and whipped cream. -----

ingredients:
eggs 3
caster sugar 150g
oil 150g
self raising flour 150g
vanilla essence 1/2 tsp
milk 2tbsp
almonds (chopped and roasted) 1/4 cup
(and if you dont have self raising flour, just add 1tsp of baking powder into the flour( 150g) and sift)

direction:
take eggs in a bowl and beat for a minute while beating gradually add the sugar and oil and beat altogether for 2 to 3 minutes.
sift self raising flour in the egg mixture and mix.
add vanilla essence and milk in the batter and mix well.
pour the batter into a loaf pan and bake in the preheated oven for 40 to 45 minutes 180°C.

☞Reduce the sugar a little when replacing with regular sugar.

Almond Pound Cake
1 1/2 C Flour
1 tsp Baking Powder
1/2 tsp Salt
1 C Butter - room temperature
3/4 C Sugar
3 Eggs
1/2 tsp Almond Extract
1/2 tsp Vanilla Extract
1/4 C Buttermilk
Grease & line loaf pan with parchment paper
In a medium bowl whisk together flour, baking powder & salt. Set aside.
In a large bowl cream butter for 2 - 3 minutes. Add sugar and beat another
3 - 4 minutes, mixture should be pale in color and fluffy. Add eggs one at a
time making sure each is well incorporated. Add in almond & vanilla extract.
Fold in half the flour and half the buttermilk alternating until everything is well blended.
Try not to over mix the batter.
Pour into loaf pan and bake @ 350 for 45 - 50 minutes for a 9 x 5 pan. 50 - 60 minutes for an 8 x 4

Lemon Almond Pound Cake
Ingredients:
1 ½ cups all purpose flour
3 tsp baking powder
¼ tsp salt
½ cup almond flour
1 stick unsalted butter
¾ cup white sugar
The zest of 1 large lemon
1 tsp vanilla extract
¼ tsp almond extract
2 large eggs
¾ cup almond breeze
Lemon Glaze Ingredients:
½ cup powdered sugar
2-3 tbsp fresh lemon juice
Toasted almonds optional
Instructions:
Preheat the oven to 350F and grease, flour and line a 8x4 inch loaf pan.
In a bowl combine the flour, baking powder and salt. Set aside.
In another large bowl cream together the softened butter, sugar, lemon zest and vanilla.
Add the eggs and mix to combine.
Add the dry ingredients, the almond flour and almond milk and mix until combined.
Transfer the batter to your prepared loaf pan and bake for 40-45 minutes. Do the toothpick test. If there’s no wet batter the cake is ready.
Allow to cool in the pan for 5 minutes, then carefully take it out and allow to cool completely.
To make the glaze combine powdered sugar and lemon juice. Add more lemon juice for a thinner glaze. Drizzle over the cake and optionally top with flaked almonds.
