Cashew Tofu Stir-fry w/ Coconut Rice ????

Serves 2
Ingredients:
Sauce
3 tbsp soy sauce
1/2 tbsp mirin
1-2 tbsp sugar
2 tsp minced garlic Pinch of pepper
2 tsp cornflour/starch 3 tbsp water
Tofu
300g firm organic tofu, pressed 1 tbsp corn flour
Salt and pepper
Other
2 cups mix of red, green and yellow capsicum, sliced 1 head bok choy, halved
1/2 cup small broccoli florets
1/2 red onion, sliced
1 shallot, sliced
1 tbsp minced ginger
1 green onion, for topping
1/2 cup cashews
Coconut rice
1.5 cup jasmine rice, rinsed well 300ml can full-fat coconut milk 80ml water
Pinch of salt and sugar, if you like
1. Add the rice, coconut milk and water to the casserole pan. Bring to a boil, then place on the lid, reduce the heat and simmer until the liquid has been absorbed and the rice is fluffy.
2. Mix together the sauce ingredients until smooth.
3. Dice the tofu and toss in the flour, salt and pepper. Cook the tofu in a pan with a little sesame oil over medium heat until
golden. Set tofu aside.
4. Add the vegetables to the pan over medium heat and cook until tender. Add the tofu back in and pour in the sauce. Toss
until everything is coated, then mix through cashews.
5. Serve with the rice and enjoy

Egg Fried Rice
Ingredients
To Cook The Rice
Basmati Rice - 1 Cup
Water
Salt - 1 Tsp
To Make Scrambled EggsEgg - 4 Nos
Oil - 3 Tsp
Sprinkle Salt
Pepper
To Make Egg Fried Rice
Oil - 2 Tbsp
Chopped Garlic
Chopped Ginger
Onion - 1 No. Finely Chopped
Red Chili - 1 No. Finely Chopped (Optional)
Green Chili - 1 No. Finely Chopped
Capsicum - 1 No. Finely Chopped
Salt - 1/2 Tsp
Pepper
Soy Sauce - 2 Tsp
Spring Onion - A Few Thinly Sliced
Scrambled Eggs
Cooked Basmati Rice
Chopped Spring Onion Greens
Method
Heat some water for cooking the rice
Add salt, and basmati rice
Cook the rice till they are fully done
Strain the rice and keep it aside
Heat a pan with some oil, crack open the eggs into the pan
Sprinkle salt and pepper
Scramble the eggs and cook till they are fully done but a little soft and keep them aside
Heat a pan with some oil, add garlic, ginger, onions, red chilies, green chili and saute
Add capsicum and stir fry
Add salt, pepper, soy sauce, spring onions and mix well
Add the scrambled eggs and mix well
Add the cooked rice and mix well with the eggs
Finally garnish with some spring onion greens and a fried egg and serve the Egg Fried Rice
Chilli tofu
Ingredients
Tofu - 200 Gms
Sesame Oil - 2 Tsp
Chopped Garlic - 1 Tsp
Chopped Ginger - 1 Tsp
Onion - 1 No.
Capsicum - 1/2 No.
Soy Sauce - 1 Tbsp
Red Chili Sauce - 2 Tbsp
Tomato Ketchup - 1 Tbsp
Vinegar - 1 Tsp
Red Chili Flakes - 1 Tsp
Water - 1/2 Cup
Corn Flour - 1 Tsp
Water
Spring Onion Greens
Method
1. Firstly, marinate the tofu pieces with red chili sauce, soy sauce, salt, and pepper
2. Marinate it for about 10 minutes
3. Once the tofu pieces are marinated, pan fry the pieces till they are golden brown in color and keep them aside
4. Heat a pan with some oil, saute ginger, garlic, onion, capsicum and spring onions
5. Add the sauces and mix well
6. Mix the cornflour in some water to make a cornflour slurry and add it to the pan
7. Add the fried tofu pieces and bring the gravy to a boil
8. Garnish it with chopped spring onion greens and serve it hot

1 packet (16 ounces) firm tofu OR silken tofu, drained
Kosher salt
Neutral oil
1 shallot, sliced thinly cross-wise
3 cloves garlic, sliced thinly length-wise
1/2 Thai red chile or similar, sliced thinly
2 scallions, cut into 2-inch segments, making sure white and green parts are separated
2 tablespoons light soy sauce

In this video, learn how to make a low carb and protein-rich Tofu Pulao/Soya Paneer Pulao which is super tasty and also very easy to cook.
Ingredients:
Basmati Rice - 50 gms
Tofu/Soy Paneer - 100 gms
Green Peas: 50 gms
Ghee: 10 gms
Salt: 1 tsp
Turmeric: 1 tsp
Method:
1. Wash the rice under running cold water for 2-3 times till the water is not cloudy anymore. Then soak it in enough water for 20 minutes. After that, drain the water.
2. Cook the rice and keep it separately.
3. Heat the ghee in a pan on medium heat. Once hot enough, add the cumin seeds and let them roast.
4. Next, add the Tofu and green peas and cook for a minute or two. Add salt, turmeric, black pepper and stir well.
5. Now reduce the heat and add the cooked rice to the prepared veggie and tofu mix.
6. Now, your Dish is ready. Let the rice rest for 10 mins before serving! Serve it hot.
