How To make Turkey Tacos
1 Pound turkey scallops
2 Tablespoons olive oil
1 Teaspoon salt
1/2 Teaspoon pepper
4 corn tortillas
1 Cup refried black beans
1/4 Cup red salsa
1/4 Cup pickled shallots
1 avocado -- sliced
Combine turkey scallops in a mixing bowl with oil, salt and pepper. Heat the grill or dry cast iron pan over high heat until smoking. Sear the turkey slices about half a minute per side. Transfer to a cutting board. Chop into 1/2 inch strips and reserve in a bowl with the juices from the board. To make tacos, toast the tortillas. For each serving, stack 2 tortillas and spread with a layer of black beans. Top with seared turkey strips, a tablespoon each of salsa and pickled shallots, and avocado slices. Roll and serve hot. Thinly sliced turkey, well-seasoned and panseared, makes an excellent quick taco filling. These actually bear more resemblance to authentic Mexican food than all those crisp, ground beef filled tacos. This recipe can be assembled quickly from things it is easy to keep in the house, but can be adapted to include leftovers in your refrigerator. If you have only pink beans use them instead; add tomato slices if you have them, or other pickled vegetables instead of the shallots. 10/22/96 show

Ingredients:
2 tsp avocado oil
2 pounds ground turkey 97% lean
1 and 1/2 tbsp cumin
1/2 tsp smoked paprika
1 tsp chili powder
1 tsp salt
3 large cloves garlic, minced
3/4 cup diced white onion
1/3 cup chicken broth
3/4 cup tomato sauce
1 bay leaf
crunchy taco shells
shredded lettuce
shredded cheese
diced tomatoes
Instructions:
Instant Pot Recipe
Press saute, add avocado oil and ground turkey breaking it up as it cooks, about 3-4 minutes. Add in onion, garlic, cumin, smoked paprika, chili powder, and salt, cook for 2-3 minutes until onions are soft.
Pour in the chicken broth, tomato sauce, and bay leaf. Cover and cook on high pressure for 20 minutes, natural release. Discard the bay leaf, taste and adjust seasonings if needed, I like to add more salt.
Heat your crunchy taco shells according to package. Assemble tacos, use about 1/4 cup of taco meat per shell, and top with shredded lettuce cheese tomatoes and your favorite salsa!
Notes
This recipe makes enough to feed my family for 2 nights! You can store meat in the fridge for up to a week or freeze for up to 3 months.

These turkey tacos are to die for. Great flavor and an absolute joy to everyone who try's them. Like always, as easy as possible to do and the most flavor possible.
Originally, we were going to do cook these outside on the disco and make a Turkey Discada Tacos video, but it is blazing hot outside at the moment, so we decided to make them inside. This would be the same exact process cooking outside, and the disco would provide a lot more room than this large pan we used.
Plus, outdoor cooking is always best in my opinion.
We did our very own pico de gallo, and added avocado to these tacos. It makes for a great combination of flavor.
Finally, if you happen to have any leftovers be sure to watch till the end to see what we do with our leftover turkey.
