How To make Up Side Apple Cake
WALDINE VAN GEFFEN VGHC42A:
1/2 c + 2 tb unsalted butter; room
-temp 1/4 c Light-brown sugar, packed
2 lg Granny Smith apples; peel,
-cored, 1/4" slices 1 c Granulated sugar
1 lg Egg
1 c Unsweetened applesauce
2 1/4 c Flour
1 ts Baking soda
1 1/2 ts Ground cinnamon
1/4 ts Freshly ground nutmeg
1/2 ts Salt
CINNAMON DREAM TOPPING 6 oz Cream cheese; room temp
3/4 c Sour cream
3/4 ts Ground cinnamon
1 c + 2 tb powdered sugar
Grease 9" springform or round cake pan 1 1/2" deep. Melt 2 tb butter with brown sugar in 10" skillet over medium heat. Add apple slices. Cook over medium heat until apples begin to soften, about 4 minutes, stirring often. Arrange apples in even layer over bottom of prepared cake pan. Set aside to cool. Cream remaining 1/2 c butter and granulated sugar until light. Add egg. Beat until smooth. Add applesauce and blend well. Combine flour, baking soda, cinnamon, nutmeg and salt in small bowl. Add to creamed mixture. Mix until smooth. Spread batter evenly over apples. Place pan on baking sheet. Bake on middle rack of 350~ oven until wood pick inserted in center comes out clean, about 40 to 45 minutes. Cool on rack 15 minutes. Use small flexible knife to separate cake from sides of pan. Invert pan on serving platter and unmold cake (replace any apple slices that may remain in pan). Serve warm. Pass CINNAMON CREAM TOPPING in separate dish. Beat cream cheese and sour cream until smooth. Gradually add cinnamon, then sugar, mixing well after each addition until smooth. Let stand 15 minutes at room temperature before serving. Ingredients
Fruit Base
¼ cup (60 g) unsalted butter
⅔ cup (140 g) packed dark brown sugar
2 tsp (10 ml) lemon juice
5-6 slices tinned, or 4-5 fresh pineapple rings
Cake
¾ cup (175 ml) buttermilk
⅓ cup (80 ml) vegetable oil
3 large eggs
1 tsp (5 ml) vanilla extract
1 ½ cup (225 g) all-purpose flour
¾ cup (150 g) sugar
1 tsp (3 g) baking powder
½ tsp (2 g) salt
¼ tsp (1 g) baking soda
⅒ tsp (less than 1 g) ground nutmeg
½ cup (50 g) sweetened flaked coconut
Fruit Base Cake Assembly
1. Preheat the oven to 350 F (175 C).
2. Place a 9-inch ovenproof skillet on a burner on medium heat. Melt the butter and brown sugar, stirring until melted and bubbling. Stir in the lemon juice, then remove the pan from the heat. Arrange the pineapple slices in this syrup so they are close together but not overlapping. Set aside.
3. In a large bowl, whisk the buttermilk, oil, eggs and vanilla. In a separate bowl, sift the flour, sugar, baking powder, salt, baking soda and nutmeg. Add this to the buttermilk mixture and whisk until just blended. Stir in coconut. Pour the batter over the pineapple slowly (so as not to shift the fruit). Bake the cake for 30-35 minutes, until a tester inserted in the centre of the cake comes out clean. If using fresh pineapple, the cake may need an extra 5-10 minutes baking time. Let the cake cool for 30 minutes in the pan. Place a serving plate over the cake and invert the pan, lifting it to reveal the pineapple now on top. Serve warm or at room temperature.

COOK UNTIL CARAMELIZED

ADD THE APPLE
1 TSPN CINNAMON POWDER
COOK FOR 30 SEC.
KEEP ASIDE
1 EGG
1/3 CUP SUGAR
MIX WELL
¼ CUP OIL
1 TSPN VANILLA ESSENCE
MIX WELL
1 CUP FLOUR
1 TSPN BAKING POWDER
SIEVE
½ CUP MILK
MIX
POUR OVER THE APPLE PIECES
PLACE A FRYPAN
COOK FOR 25-30 MIN. IN LOW FLAME

Upside-Down Apple Cake Recipe
This upside down apple cake is super moist and soft. Topped with a delicious layer of caramelized apples. Impressive cake that you can prepare for any occasion.

Ingredients:
For the cake:
3/4 cup (170g) butter, softened
3/4 cup (150g) sugar
3 Eggs
1/2 cup (120ml) Milk
1 teaspoon Vanilla extract
1¾ cups (220g) Flour
1 teaspoon Baking powder
1/4 teaspoon Salt
1 teaspoon Cinnamon
For the apple caramel layer:
1/4 cup (60g) Butter, melted
1/2 cup (100g) light brown sugar
2-3 Apples
Directions:
1. Preheat oven to 350F (175C). Grease a 9-inch (23cm) springform pan.
2. In a large bowl cream butter and sugar, add eggs, one at the time and beat until combined. add milk, vanilla extract and beat until combined. add flour, baking powder, salt, cinnamon and stir until incorporated. set aside.
3. Make the caramel: In a small bowl stir melted butter and brown sugar. Transfer to the prepared pan.
4. Peel the apples and thinly slice. Arrange the apples over the caramel in a circular pattern with each one overlapping the other. Repeat until the entire bottom of the pan is covered.
5. Pour cake batter on top of apples and smooth the top of the batter
6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven, allow to cool for 3-5 minutes, turn out onto serving platter. Let cool slightly before serving.
